Im a big fan of the buffet inside Whole Foods store and I just want to recreate some of teh dishes and mostly the pizzas at home...

    The delicious tasting heart of palm is actually low in calories and fat and high in fiber:





    Heart of palm (or “palmito”) comes from a perennial palm tree native to the humid tropics of America. For centuries it has been cultivated by indigenous communities in the Amazon Region, as a subsistence plant on small farms. However, in recent years it has aroused interest among farmers, industrialists and researchers from Central America to Brazil, mainly due to heart of palm’s multiple uses.





    Palmito is the central part or heart of some wild varieties of palm trees that originated in the South American tropical jungle. These varieties have undergone a process of adaptation and become a farm species.





    The main variety that has been domesticated is the botanical species Bactris gasipaes of the Palmaceae family, known in Ecuador as “chontaduro” and in Costa Rica as “pejibaye.”





    Heart of palm is considered a very exotic gourmet product. It has a high fiber content and no cholesterol. It also has large amounts of iron and calcium. Heart of palm is soft, ivory-colored, firm in texture and delicate in flavor. It is typically used in salads or “ceviches” or even mixed in or fried for main dishes.





    The heart of palm is growing daily in the variety of uses - the beauty of this gourmet vegetable is that is is so versatile.

    The company I work for had a party at the Taste of Texas the other day and I had some heart of palm on my salad from the salad bar. Basically you just open the can of this vegetable rinse and drain it and garnish salads with it. It is now also available fresh in some speciality markets.





    Here is another recipe for you from renouned chef Wolfgang Puck:


    Hearts of Palm Salad with Shaved Parma Ham





    Serves 8





    Preserved Lemon Vinaigrette:


    1 tablespoon diced Preserved Lemon Peel (see ';Sauces and Dressings';)


    1 teaspoon chopped fresh chives


    1 teaspoon sugar


    1/2 teaspoon salt


    1/4 cup Champagne vinegar


    2/3 cup extra-virgin olive oil


    Freshly ground black pepper





    4 pounds fresh hearts of palm, outer husks removed, or 1 pound canned hearts of palm, drained


    1/4 pound thinly shaved Parma ham


    1 cup micro greens or small mixed baby salad greens


    4 teaspoons extra-virgin olive oil


    Salt


    Freshly ground black pepper


    4 teaspoons julienned Preserved Lemon Peel, recipe follows





    For this Hawaiian-inspired first-course salad, you’ll find fresh hearts of palm in some well-stocked produce sections and specialty food stores. If not, substitute canned hearts of palm for this recipe from Spago Maui.





    1. For the Preserved Lemon Vinaigrette, in a mixing bowl, stir together all the ingredients. Season to taste with a little more salt and some pepper. You should have about 1 cup of dressing. Cover and set aside.





    2. If using fresh hearts of palm, you should have some bigger, thicker pieces and some smaller, thinner pieces. Put the bigger pieces in a nonreactive dish and cover them with 3/4 cup of the Preserved Lemon Vinaigrette. Cover with plastic wrap and marinate in the refrigerator for 2 hours.





    3. Drain the marinated hearts of palm and wrap each piece in a piece of ham. After the pieces are wrapped, cut them crosswise into 1/2-inch-thick rings. Slice the smaller pieces into 1/4-inch thick rings and set aside.





    4. Drape half of each serving plate with the remaining Parma ham.





    5. In a mixing bowl, toss the mesclun with the sliced small hearts of palm and 4 teaspoons of extra-virgin olive oil and season to taste with salt and pepper. Mound some of the greens mixture in the center of each serving plate. Place the ham wrapped rounds around the salad. Drizzle the remaining Preserved Lemon Vinaigrette around each plate and garnish with the julienned Preserved Lemon Peel. Serve immediately.





    Another recipe is:





    Hearts of palm, avocado, and red onion salad with corriander dressing





    In the West Indies, salads are rarely leafy; rather they are often based on avocado and onion. We added hearts of palm for an additional tropical touch.





    Can be prepared in less that 45 minutes.

    For vinaigrette


    1 small garlic clove


    1/4 cup fresh coriander, washed and spun dry


    3 tablespoons fresh lemon juice


    1/2 teaspoon sugar


    1/4 teaspoon salt


    1/2 cup olive oil





    For salad


    a 14-ounce can hearts of palm, drained


    4 California firm-ripe avocados


    1 small red onion, sliced thin


    Boston lettuce leaves (from about 2 heads)

    Make vinaigrette:


    In a blender purée garlic and coriander with lemon juice, sugar, and salt. With motor running add oil in a stream, blending until dressing is emulsified.





    Make salad:


    Cut hearts of palm and avocado into 3/4-inch cubes and in a large bowl with a rubber spatula gently toss with onion and vinaigrette until combined well.





    Line 8 salad plates with lettuce leaves and mound avocado mixture on top.

    Hearts of palm are, literally, the heart of the sabal Palmetto, a tall, tough-barked graceful palm that is the state tree of Florida. Called ';swamp cabbage'; by native Floridians, it was long regarded as poor people's food--and was actively cut down as a source of food during the Depression, no mean task in the days before chain saws. It wasn't long, however, before its extreme tenderness and delicacy was noticed--and its name changed from ';swamp cabbage'; to ';millionaires' salad.'; It wasn't long after that, then, that Florida enacted a state law to protect it from the ravenous gourmets.


    Hearts of palm, of course, has flourished for thousands of years throughout Central and South America. In fact, at the time Columbus arrived in the new world, the Carib Indians were taking full advantage of what they called the Pejibaye tree. They housed themselves with its bark; put a roof over their heads with the leaves; ate the nuts of the mature tree...and ate the center core of the young plants.





    Today this young tree is grown, harvested, and canned as a cash crop throughout Central and South America, especially Brazil. It needs 150 inches of rainfall each year to flourish, and cannot endure freezing weather. It is harvested at the age of 12 months, when the plant is about 5 feet tall and has an outside perimeter of 4 inches.     Hearts of palm have no cholesterol; have excellent fiber content, hardly any fat content, and are low in calories


    Salad:


    1 15 ounce can hearts of palm, drained and diced, about 1 1/2 cups


    1 16 ounce can pitted medium black olives, drained


    10 ounces frozen peas


    1/2 minced red onion


    3 ripe tomatoes, cut into wedges


    1/3 cup chopped parsley


    Dressing:


    1/3 cup red wine vinegar


    1 teaspoon prepared yellow mustard


    4 cloves garlic, passed through a press


    1/4 teaspoon ground black pepper


    1/2 virgin olive oil


    8 ounces feta cheese, cubed


    PREPARATION:


    Combine the salad ingredients in a bowl.


    In a separate bowl, combine all ingredients except the cheese and oil and mix. Blend in the oil and season to taste. Pour over the salad and refrigerate several hours before serving.


    To serve, toss with the feta cheese and serve.


    About 8 servings.

    Irish Breakfast Scones





    2 1/2 cups all-purpose flour


    1/2 teaspoon salt


    2 tablespoons butter


    2 tablespoons granulated sugar


    2 teaspoons baking powder


    1/2 cup raisins


    7/8 cup milk





    Heat oven to 400 degrees F.





    Sieve flour and salt into a bowl. Rub in the butter with your fingers or a pastry blender. Add the sugar, baking powder and raisins and mix together well.





    Add the milk and mix into a loose dough. Turn onto a floured board and knead until smooth (about 10 times). Roll out; cut the dough in half, then into quarters and then into eighths. Place on a lightly floured baking sheet, then brush the top of each scone with milk and sprinkle with sugar.





    Bake for 15 to 20 minutes. When done, transfer to a wire rack to cool.








    Irish Omelet





    6 small eggs, separated


    4 medium size potatoes, cooked and mashed


    Lemon juice


    1 tablespoon chopped chives or scallions


    Salt and pepper to taste


    1 tablespoon butter





    To the mashed potato, add the beaten egg yolks. Mix the two ingredients thoroughly and then add the lemon juice, chives, salt and pepper.





    Heat the butter in an omelet pan.





    Whisk the egg whites until stiff and stir them into the potato mixture. Cook the mixture until it turns golden, then run under the broiler to finish.

    How to make them

    Classic Victoria Sandwich


    4 large eggs





    225 g caster sugar





    225 g self-raising flour





    225 g butter (room temp)





    I teaspoon vanilla extract





    Step 1: Preheat the oven to 190 degrees.





    Step 2: Cream together the caster sugar and butter until fluffy.





    Step 3: Add the eggs one at a time, mixing them in very carefully and beating well.





    Step 4: Add vanilla extract, is using, and then fold in the well-sifted flour.





    Step 5: Split the mixture into the tins.





    Step 6: Bake for 20 minutes or until a skewer comes out clean.





    Step 7: Remove from the oven and turn onto a wire rack. Cool.

    BROCCOLI %26amp; TWO CHEESES CASSEROLE





    This is the best broccoli casserole that I'v ever eaten. The two types of cheese really make it superb!





    2 small bags or one family-size bag broccoli pieces


    1 large onion, cut into big pieces


    2 cans cream of mushroom soup


    1 bag each, shredded mild cheddar and monterrey jack {size opt}


    1 sleeve ritz crackers, crushed


    1/2 cup melted butter





    Boil broccoli and onions together until tender, Drain. In large bowl add broccoli and onions, both cans of soup and both bags of cheese. Mix well. Pour into large casserole dish. In separate bowl, combine crushed crackers and melted butter. Mix until cumbly. Spread over broccoli and bake at 350 until cracker crumbs are golden brown

    Conniosseur's Casserole





    1 12 pz can white shoe peg corn drained


    1 16 oz can French cut string beans drained


    1/2 cup celery chopped


    1/2 cup onion chopped


    1 2 oz jar pimentos chopped


    1/2 cup sour cream


    1/2 cup sharp Cheddar cheese, grated


    1 10 3/4 oz can cream of celery soup


    1/2 tsp salt


    1/2 tsp pepper





    Topping:


    1 cup Ritz cracker crumbs


    1/2 stick butter, melted


    1/2 cup slivered almonds





    Mix all ingredients except topping. Place in 1 1/2 qt. casserole. Sprinkle topping over casserole.


    Bake at 350 for 45 minutes. Serves 8.





    (I have subbed water chestnuts chopped for the celery and it is very good.)

    Grown-Up Macaroni %26amp; Cheese





    4 oz thick-sliced bacon


    Vegetable oil


    Kosher salt


    2 cups elbow macaroni or cavatappi


    1½ cups milk


    2 Tbsp. unsalted butter


    2 Tbsp. all-purpose flour


    4 oz Gruyere cheese, grated


    3 oz extra-sharp Cheddar, grated


    2 oz blue cheese, such as Roquefort, crumbled


    ¼ tsp freshly ground black pepper


    Pinch nutmeg


    2 slices white sandwich bread, crusts removed


    2 Tbsp. freshly chopped basil leaves





    Preheat the oven to 400ºF. Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon is crisp. Remove the pan carefully from the oven - there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and crumble when it is cool enough to handle.


    Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.


    Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt the butter in a medium pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or 2 more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, blue cheese, 1 teaspoon salt, pepper, and nutmeg. Add the cooked macaroni and crumbled bacon and stir well. Pour into 2 individual size gratin dishes.


    Place the bread slices in a food processor fitted with a steel blade and pulse until you have coarse crumbs. Add the basil and pulse to combine. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

    Buttermilk Pound Cake





    1 cup butter (no substitutes), softened


    3 cups sugar


    4 eggs


    3 cups all-purpose flour


    1/4 teaspoon baking soda


    1 cup buttermilk


    1 teaspoon vanilla extract


    Confectioners' sugar, optional





    In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine flour and baking soda; add alternately with the buttermilk and beat well. Stir in vanilla. Pour into a greased and floured 10-in. fluted tube pan. Bake at 325° for 1 hour and 10 minutes or until cake tests done. Cool in pan for 15 minutes before removing to a wire rack to cool completely. If desired, dust with confectioners' sugar.

    Chocolate Pudding Cake





    This makes a nice cake layer that magically floats atop a layer of warm, fudge pudding!





    3/4 cup granulated sugar


    1 cup plain flour


    1/4 teaspoon salt


    2 teaspoons of baking powder


    2 Tablespoons cocoa


    ½ cup milk


    1 teaspoon of vanilla


    3 Tablespoons melted, cooled, margarine





    Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x15” dish).





    TOPPING:


    ½ cup of granulated sugar


    ½ cup brown sugar


    1/4 cup cocoa





    Mix topping sugars and cocoa together and sprinkle dry ingredients over batter. Pour 1 ½ cups of tap water over all. DO NOT STIR.





    Place in oven and bake at 350ºF for 45 minutes or until topping is done. (In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom.)





    Serve in bowls with spoons. Serves 6-8 people. Good with vanilla ice cream or cool whip.

    Crust:


    2 cups flour


    2 sticks butter,melted


    1/2 cup chopped pecans





    Mix together and press into a 9 x 13 cake pan. Bake at 350 for about 15 minutes until slightly brown. Let cool completely.





    Filling:


    1 8 oz. cream cheese,softened


    1 8 oz. cool whip


    1 box powdered sugar





    Mix together and spread on top of crust. Top with 1 can of blueberry pie filling. (Can use any type of pie filling you like.)Anyone have any great ';tried and true'; potluck dinner recipes?
    CORN CASSEROLE





    1 can whole kernel corn, drained


    1 can creamed corn


    2 eggs, beaten


    1 box Jiffy corn muffin mix


    1 stick butter, melted (or 1/2 c. oil)


    1 c. sour cream


    1/4 - 1/2 tsp. garlic powder (opt.)


    Shredded cheese (opt.)





    Mix all ingredients except cheese. Sprinkle shredded cheese on top, if desired. Bake in casserole dish or 9';x13'; baking dish for 30 to 45 minutes or until fully cooked in center.





    Chocolate Chip Treasure Cookies





    1 1/2 cups graham cracker crumbs


    1/2 cup all-purpose flour


    2 teaspoons baking powder


    1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)


    1/2 cup butter or margarine, softened


    1 1/3 cups flaked coconut


    1 (12 ounce) package semi-sweet chocolate chips


    1 cup chopped walnuts





    Preheat oven to 375 degrees F. In small bowl, combine graham cracker crumbs, flour and baking powder. In large mixing bowl, beat EAGLE BRAND® and butter on low until smooth. Add crumb mixture; mix well. Stir in coconut, chocolate chips and walnuts. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 9 to 10 minutes or until lightly browned Store loosely covered at room temperature.
    Enchilada Cassarole





    For potluck dinner's I double the recipe





    Brown together....


    1 pound ground beef


    1/2 cup chopped onion





    Drain drippings...


    Add


    1 can each tomato soup and cream of chicken soup


    1 can chopped chillies.


    Reheat.





    Place one layer of flour tortillas in the bottom of 9X13 casserole. Spoon half of beef mixture on top. Place another layer of flour tortillas, spoon remaining beef mixture on top.





    Cover with 1/2 cup of grated cheddar cheese on top. Pour 1/4 cup milk over top (if cooking in an electric oven omit the milk).





    Bake at 350 degrees until cheese melts.
    This is always a big hit - It's Penne with 5 Cheeses





    Kosher salt


    2 cups heavy cream


    1 cup crushed tomatoes in thick tomato puree


    1/2 cup freshly grated Pecorino Romano (1 1/2 ounces)


    1/2 cup shredded imported Italian fontina (1 1/2 ounces)


    1/4 cup crumbled Italian Gorgonzola (1 1/2 ounces)


    2 tablespoons ricotta cheese


    1/4 pound fresh mozzarella, sliced


    6 fresh basil leaves, chopped


    1 pound imported penne rigate pasta


    4 tablespoons (1/2 stick) unsalted butter





    Preheat the oven to 500 degrees F.





    Bring 5 quarts of salted water to a boil in a stockpot.





    Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well.





    Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine.





    Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2-cup capacity). Dot with the butter and bake until bubbly and brown on top, 7 to 10 minutes.





    And here's a super easy cobbler recipe - make it with the flavor of your choice!





    1/2 cup butter or margarine, melted


    1 cup sugar


    3/4 cup flour


    1/2 teaspoon salt


    2 teaspoons baking powder


    3/4 cup milk


    1 (15 ounce) can pie filling





    Melt butter or margarine in baking dish.


    Mix sugar, flour, salt, and baking powder.


    Add milk and mix well.


    Pour batter into melted butter-- do not stir.


    Pour pie filling into batter (I drop it by spoonful and put several spoons in the middle and then divide the rest into the corners and sides-- do not stir).


    Bake@ 350° for 50 minutes to 1 hour or until golden brown.
    Make a couple of these pies. The Lemon is my daughter's favorite, and you can make them the day ahead:





    LEMONADE PIE


    1 large container Cool Whip


    1 (6oz) can frozen lemonade, thawed %26amp; undiluted


    1 can Eagle Brand sweetened, condensed milk


    1 9'; graham cracker crust (storebought is fine)


    extra Cool Whip for the top


    Mix Cool Whip, lemonade %26amp; milk together really well and pile into the crust. Dollop extra Cool WHip around the edges. Chill at least 4 hours.... (can also use pink lemonade or limeade - which tastes like Key Lime Pie)





    Since it's a pot-luck, and assuming the main dish will be sitting out on a table, why not bring an ANTIPASTO SALAD?





    1 small head cauliflower, separated


    1 green bell pepper, cut into 1/4'; strips


    1-3 large carrots, cut into 1/4'; strips


    1 red onion, sliced into rings


    4 stalks celery, cut into strips


    5 oz. stuffed green olives


    6 oz. pitted black olives


    1/2 lb. fresh mushrooms, sliced


    1/2 to 1 cucumber, sliced


    Optional Ingredients: cherry tomatoes, radishes, Italian peppercinis, salami or pepperoni slices, cubes of mozzarella or provolone cheese





    OREGANO DRESSING:


    1-1/2 c. vinegar, slightly warmed


    1 c. olive oil


    4 TB. sugar


    1 tsp. oregano


    2 tsp salt - pepper to taste


    Combine all ingredients and whisk until well blended


    Place all salad ingredients into a large bowl with a lid (like Tupperware). Add dressing and toss well. Can be made well ahead and refrigerated; tossing occasionally. Drain before serving.... Serves 12 (or more, depending on how much of the optional things you add)
    Jambalaya





    8 oz Andouille sausage or Chorizo (about 2 sticks), diced


    2 lb boneless chicken breast, diced


    2 (14 1/2 ounce) can diced tomatoes


    5 cups chicken broth


    2 (8 ounce) package Zatarain's jambalaya mix





    Directions





    Add 2 tbs oil to a large pot, and over medium heat, brown the meats. Add canned tomatoes, Zatarain's and chicken broth in place of the water called for in the Jambalaya mix. Bring to a boil, cover and simmer for about 30 minutes.





    *** If you want this to be LESS spicy: the spice mixture in the Zatarain's box is clumped together. You can ';catch'; it, and add half or two-thirds -- whatever you think you'd prefer. I use it full-strength for this, because I'm adding so much meat to the boxed mix.








    Berry Cobbler:





    1 cup all-purpose flour


    2 teaspoons baking powder


    1/2 teaspoon salt


    1 cup milk


    1/2 cup butter, melted


    2 1/2 cups fresh (or frozen, thawed %26amp; drained) mixed berries


    1 cup sugar


    Cream, whipped cream or ice cream, if desired





    1. Heat over to 375ºF.





    2. Mix flour, baking powder, salt and milk in ungreased 8-inch square pan or skillet. Stir in butter until blended.





    3. Mix berries and sugar; spoon over batter.


    (If you'd prefer, mix berries and sugar; let stand about 20 minutes or until fruit syrup forms before spooning over batter.)





    Bake 45 to 55 minutes or until dough rises and is golden. Serve warm with cream.
    Everyone raves about this salad and even the kids love it.





    Strawberry and Feta Salad





    Original recipe yield: 10 servings


    INGREDIENTS


    1 cup slivered almonds


    2 cloves garlic, minced


    1 teaspoon honey


    1 teaspoon Dijon mustard


    1/4 cup raspberry vinegar


    2 tablespoons balsamic vinegar

    DIRECTIONS


    In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted. Remove from heat, and set aside.


    In a bowl, prepare the dressing by whisking together the garlic, honey, Dijon mustard, raspberry vinegar, balsamic vinegar, brown sugar, and vegetable oil.


    In a large bowl, toss together the toasted almonds, romaine lettuce, strawberries, and feta cheese. Cover with the dressing mixture, and toss to serve.

    This is a really easy recipe, and you can change the cheese to whatever you want...I usually use half sharp cheddar and half fontina. If it's a large gathering, double the recipe. This is always popular...just make sure to not overcook the pasta!








    3 tablespoons butter


    3 tablespoons flour


    1 1/2 cups whole or 2 percent milk


    3 cups shredded white cheddar cheese


    1/2 teaspoon dry mustard


    1/4 teaspoon ground cayenne pepper, a couple pinches


    Salt


    1 pound elbow macaroni, cooked 8 minutes or to al dente, with a little bite to it





    Heat a medium, deep skillet over medium heat. Add butter. When butter melts, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded cheddar cheese a handful at a time. Season sauce with dry mustard and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the cheddar cheese on top.
    The easiest dessert I've ever made, and the one that always gets eaten is my Cherry/Chocolate Trifle.





    All you need is a large can of cherry pie filling, a box of instant chocolate pudding, a tub (12 oz) of Cool Whip, and either brownies or a moist chocolate cake.





    Make the pudding according to the directions and mix in half of the cool whip after the pudding sets. Next, cut up the brownies/cake into bite size pieces. In the trifle bowl, layer the cake, pudding, cherries until you get close to the top. You should end with a pretty layer of cherries. Put the rest of the cool whip in a zip bag, snip the corner, and pipe the cool whip on top of the cherries (circle the edge) then crumble a bit of the cake/brownie on top of the cherries like confetti.... it just adds to the presentation.





    I have always taken home an empty trifle bowl. Other variations you could do:


    strawberries, pound cake, and vanilla pudding


    Heath Bar, chocolate cake, chocolate pudding


    blueberries, yellow cake, lemon pudding


    bananas, nilla wafers, banana and vanilla pudding





    I don't have a casserole dish recipe, because everyone always wants me to do a trifle.... :)
    Everyone makes heavy desserts, lots of chocolate. So go light! Serve a angel food cake plain. Place a bowl next it with fruit. Take frozen or fresh mixed berries, strawberries, blueberries, black %26amp; red raspberries in a bowl, sprinkle with a little sugar %26amp; they will make their own juice. Be sure to cut the strawberries in half. Per cut the cake into slices, easier. Then folks can spoon fruit on to the cake. Also have cool-whip on the side as well. Yum!


    For meat, meatloaf, stuffed peppers or stuffed cabbage rolls.

    Keep it simple! My daughter absolutely loved chopped up soft foods like avacado, tofu, canned fruit (no sugar added), and canned veggies (no added salt). Things that you might think are gross, she might love! One thing I did to get her to eat her jar food (like mixed veggies) was to add some of those chunky foods to it, like tofu. She was so glad to be eating something solid, that she would eat anything from a jar after that. Good luck and just keep trying lots of different things. Just keep the salt and sugar to a minimum. Getting her to eat a variety of things now will pay off in the future. :)Any ideas on recipes for a 10 month old?

    Pineapple Yogurt Juice





    Assuming your daughter isn't allergic to Yogurt or Pineapple Juice.





    Put equal parts plain yogurt and pineapple juice into the blender(You use the empty yogurt container to measure the juice), blend it, and serve it either in a bottle or whatever she likes to drink from. We called it ';Yogurt Juice'; and my little ones loved it. It is inexpensive and the pediatrician said the idea was great.

    I agree with IMS but just be careful when addi ng salt if you are gonna feed your baby your own food, Mashed veg, with a little gravy has always been a good one, babies love it, Also try finger foods, stuff they can pick up to suck and chew, your baby may not have teeth yet, but their gums are very hard, ..





    Also buy an ice cube tray, try freezing what you make, then you wont have to worry everyday about cooking for your baby, cos you will have a batch in the freezer....

    INGREDIENTS


    1 (12 ounce) package vegetarian burger crumbles


    3 (15.25 ounce) cans kidney beans

    that is a recipe for a regular chili and i use it as my base recipe. i like to use veggie crumbles in place of the meat, any kind of veggie ground meat will work. i also like to use half kidney beans and half black beans. once it is cooked i usually add about 8-12 ounces of cooked elbow macaroni and i stir in a bunch of cheddar cheese(however much you like) and i call it ';chili mac';. my family and my boyfriend LOVE this when i make it. i cook dinner at least once a week at my boyfriend's apartment and he has never once asked me to repeat a recipe(he is a very picky eater) and he has requested this 4 times! trust me it is a winner! enjoy!

    In the South, this is ham country and we soak salty ham (gammon) in milk or water overnight to get the salt out. Consider this a reverse brining and change the water 3 or 4 times. By soaking the salted ham in water you will draw the salt from the meat but also add moisture. Some people say you need to soak your country ham for about 6 to 12 hours. Then cook as needed.

    Apricot Bleu Cheese Stuffed Chicken Breasts





    4 ounces dried apricots, chopped


    2 tablespoons parsley, chopped


    4 cloves garlic, minced


    4 ounces bleu cheese, crumbled


    2 boneless chicken breasts, halved


    8 slices bacon





    Preheat oven to 375F. Mix apricots, parsley, garlic and cheese in a small bowl. Loosen the skin of chicken breasts and stuff cheese mixture underneath. Press the skin down. Wrap each breast half with 2 slices of bacon. Place breasts in a greased baking dish. Bake about 40 minutes or until done.











    Beef and Bleu Cheese Salad





    3 tablespoons balsamic vinegar


    2 tablespoons olive oil


    1 clove garlic, minced


    1/2 teaspoon salt


    1/2 teaspoon pepper


    1 boneless beef sirloin steak, cut 1 inch thick, about 12 ounces


    1 tablespoon snipped fresh thyme


    2 teaspoons snipped fresh rosemary


    4 1/4 inch thick slices red onion


    6 cups lightly packed mesclun or torn mixed salad greens


    8 yellow and/or red pear shaped tomatoes, halved


    2 tablespoons crumbled Gorgonzola or other bleu cheese





    For vinaigrette, in a screw top jar combine vinegar, oil, garlic, salt and pepper; cover and shake well. Trim fat from steak. Remove 1 tablespoon vinaigrette from jar and brush evenly onto both sides of the steak. Press thyme and rosemary onto both sides of the steak. Use a clean brush to coat both sides of onion slices with some of the remaining vinaigrette, reserving the rest; set aside. Preheat gas grill. Reduce heat to medium. Place steak on the grill rack directly over heat. Cover and grill until steak is desired doneness, turning once halfway through grilling. While the steak is grilling, add onion slices to grill. Cover and grill for 6 to 8 minutes or until tender, turning once halfway through grilling. Divide the mesclun among 4 dinner plates. To serve, thinly slice the steak across the grain. Separate onion slices into rings. Arrange warm steak slices and onion rings on top of mesclun. Drizzle with the reserved vinaigrette. Top with tomatoes and cheese. Makes 4 servings.

    1/4 cup butter, room temperature


    2 ounces bleu cheese, room temperature


    1 tablespoon cognac


    1/4 cup grated Parmesan


    1/4 cup chopped walnuts


    2 tablespoons minced green onion


    1 teaspoon chopped fresh basil


    cayenne to taste


    English muffins


    ripe olive slices for garnish





    Mix butter and bleu cheese together. Add the cognac, Parmesan, walnuts, green onions, basil and cayenne. Lightly toast the muffin halves, spread with cheese mix, top with a ripe olive slice and stick under the broiler until lightly browned.











    Bleu Cheese Cole Slaw





    1/2 cup bleu cheese, crumbled


    1/2 cup buttermilk


    3 tablespoons apple cider vinegar


    2 tablespoons sugar


    12 cups shredded green cabbage, about 1 large head





    Place first 4 ingredients in processor; blend until smooth, about 30 seconds. Place cabbage in large bowl. Add dressing; toss. Season with salt and pepper. Cover; chill at least 1 hour. Can be made 1 day ahead; chill. Toss before serving.











    Bleu Cheese Onion Pie





    Pie Crust:


    For 2 uncovered pies or a top and bottom for one pie


    3 cups flour


    1 and 1/2 teaspoons salt


    1 tablespoon sugar


    1 and 1/2 cups butter


    1/2 cup cold water


    1 egg, beaten


    1 tablespoon vinegar





    Combine sifted flour, sugar and salt in a bowl. Cut the butter into the mix with a pastry blender until the consistency is fairly coarse, with lumps the size of peas. Stir and work in the egg, water and vinegar and roll the dough out on a floured board. Line the pie pan with dough, flute the edges and pour in the filling and then bake. This pie calls for only a bottom crust, so you can save the extra dough in the freezer or make two pies.





    To prepare the filling for one pie use the following ingredients:





    Filling:


    1/4 cup bleu cheese, crumbled


    1 tablespoon butter


    6 large onions, peeled and thinly sliced


    salt and pepper to taste


    1 tablespoon flour


    1 cup heavy cream


    4 whole eggs





    Preheat the oven to 400F. Heat the butter in a large frying pan and saute the onions until soft, about 10 to 15 minutes over a low heat. Salt and pepper the onions to your taste, then turn off the heat and sprinkle on the flour. Add the cream and stir well, blending all the ingredients. Add eggs, one at a time, while stirring and when thoroughly mixed, pour into the prepared pie crust. Sprinkle the crumbled bleu cheese on top and place into the oven and bake for 35 to 45 minutes, until the top is nicely browned, but not burnt. Let cool and serve with a salad and some crisp white wine.











    Bleu Cheese Pecan Crackers





    1 cup crumbled bleu cheese


    1/2 cup unsalted butter, room temperature


    1/4 teaspoon coarsely ground black pepper


    1 cup all purpose flour


    1/2 cup toasted chopped pecans

    Preheat oven to 350F. Using an electric mixer, beat cheese, butter and pepper in a medium bowl until blended; some cheese should still be in separate pieces. Using a rubber spatula, mix in flour, then chopped pecans. Roll dough aBleu cheese containing recipes?
    I am going to make a salad w/my blue cheese- spring greens, toasted pecans, diced pear, dried cherries, and zesty italian dressing. It's my fav salad.     If you can't think of anything else to do with your blue cheese, just let a stick of butter come to room temp and blend it up w/ the blue cheese. Put it on a piece of plastic wrap and roll it up really tight and put it in the freezer. Slice off a piece the next time you have steaks. Yum!

    2 lb. ground lean beef


    1/2 c. dry red wine


    2 tsp. salt


    1/4 tsp. pepper


    1 tsp. grated onion


    1/2 c. crumbled Blue cheese (about 3 oz.)





    Mix meat, wine and seasonings. Chill in refrigerator, covered, for several hours to blend flavors. Shape into 12 thin patties. Crumble Blue cheese onto half the patties. Top with remaining patties, pressing edges together so edges are completely sealed. Grill to rare or medium doneness. Serves 6

    8 tsp. vinegar


    1 tsp. salt


    8 tsp. sugar


    16 oz. sour cream


    3 (4 oz.) pkg. crumbled Danish blue cheese

    Combine sugar, salt, vinegar, sour cream and blue cheese. Pour cheese mixture over shredded cabbage, mix thoroughly. Refrigerate at least 1-2 hours.

    1/3 c. dairy sour cream


    2 tbsp. minced onion


    1/4 c. sweet pickle relish


    2 tbsp. prepared mustard


    1/4 c. crumbled blue cheese


    8 wiener buns, split %26amp; toasted


    8 wieners





    Combine sour cream, onion, relish, mustard and blue cheese. Spread 2 tablespoons cheese mixture on cut sides of each bun; insert a wiener. Wrap buns in heavy foil, heat in hot oven, 400 degrees, for 10 minutes or until heated through. Serves 8. You can make ahead and refrigerate until time to heat and serve.

    8 oz. cream cheese


    3/4 stick butter


    4 oz. blue cheese, crumbled


    1/3 c. black or green olives


    1/2 c. walnuts, chopped


    Salt, pepper, garlic salt, etc.





    Cream together softened cream cheese and butter. Add seasonings of your choice (garlic salt, pepper, etc.) Add 4 oz. blue cheese and 1/2 cup of black or green olives and blend thoroughly. Roll into ball and chill. Roll in chopped nuts and serve with crackers

    PORK BLUE CHEESE CASSEROLE





    Cook 6 ounces (about 3 cups) noodles in boiling water - salted; rinse, drain. Slowly brown 6 - 1/2 inch thick pork chops on both sides. Season with salt and pepper.





    BLUE CHEESE SAUCE:





    Melt 3 tablespoons butter; blend in 3 tablespoons all-purpose flour, 3/4 teaspoon salt and dash of pepper. Stir in 1 cup milk. Cook and stir until thick. Add 3/4 cup crumbled blue cheese (3 ounces); stir until cheese melts.


    Combine noodles, sauce and 3 tablespoons EACH of chopped green pepper and chopped pimiento. Place in 10 x 6 x 1 1/2 inch baking dish. Arrange chops on top of noodle mixture. Bake at 350 degrees about 30 minutes.

    BROILED CHICKEN BREAST WITH BLUE


    CHEESE





    2 chicken breast halves


    1 c. + 1 tbsp. fine bread crumbs


    1/3 c. blue cheese


    1 tsp. thyme (chopped)


    1 tbsp. butter


    3 tbsp. parsley (chopped)


    Salt, freshly ground black pepper to taste





    Pound the breast halves lightly to flatten. Dredge in 1 cup crumbs and broil 2 minutes on each side.


    Mix 1 tablespoon bread crumbs, blue cheese, thyme, butter, parsley, salt and pepper to form a paste. Spread the cheese mixture over the chicken and place under the broiler 6 to 7 minutes until nicely browned. Serve with rice pilaf and sauteed vegetables. Serves 2.

    GRILLED BLUE - CHEESE STUFFED PORK


    CHOPS





    4 pork loin ribs chops, cut 1 1/2'; thick (about 10 oz. each)


    1 recipe Blue cheese stuffing, follows


    1 recipe Creamy Sauce, follows


    Crumbled Blue Cheese, optional





    For chops, trim fat; cut a pocket in each chop from fat side almost to bone. Spoon about 1/4 cup of the Blue Cheese Stuffing into each pocket; close pocket with wooden toothpicks.


    In a covered grill arrange hot coals around drip pan to get medium-hot heat over drip pan. Place chops over drip pan. Cover; grill about 40 minutes or until no pink remains. Top chops with Creamy Sauce; sprinkle with blue cheese.





    Blue cheese Stuffing: In a small mixing bowl combine 1/2 cup shredded carrot, 1/4 cup chopped pecans, 1/4 cup crumbled blue cheese, 1 thinly sliced green onion and 1 teaspoon Worcestershire sauce.





    Creamy Sauce: In a small saucepan stir 4 teaspoons all-purpose flour into 1/4 cup plain yogurt. Add 3/4 cup milk, 1/2 teaspoon instant chicken bouillon granules and dash pepper. Cook and stir until thickened and bubbly. Cook and stir 1 minute more. Serves 4

    BEEF TENDERLOIN WITH PEPPERCORN-BLUE


    CHEESE BRANDY SAUCE





    4 pieces of cleaned filet, weighing 7 oz. each


    2 tbsp. whole black peppercorn, cracked


    4 tbsp. oil


    1/4 c. blue cheese, crumbled


    3/4 c. heavy cream


    1 c. brown sauce


    1/3 c. brandy


    Salt to taste





    Lightly salt the tenderloin, then roll them in the peppercorns, pressing down the pepper into the filets. Heat the oil in a large skillet, until very hot. Add the filets and cook over high heat for 2 minutes on each side or until desired doneness. Lift them out of the skillet and keep warm on serving platter while making the sauce.


    Deglaze the skillet with the brandy and let it flambe. Stir in cream and blue cheese, scraping the bottom of the skillet to dissolve any meat glace. Add brown sauce and let reduce until desired consistency. Adjust seasoning. Pour ove

    Hash is really good. I don't know how much meat and potatoes you have left, so you'll have to do it by eye. Shred up you meat and dice up your potatoes. Dice up a little onion. Fry it all in a pan with butter, salt, and pepper (careful, the potato will try to stick!) When it is hot and some of the potatoe and meat is browned, serve it heaped on a plate with a fried egg on top.     INGREDIENTS


    1/2 cup vegetable oil, divided


    4 cloves garlic, minced


    1 (28 ounce) can crushed tomatoes in puree


    1 (10 ounce) can tomato sauce


    2 tablespoons Italian seasoning


    1 teaspoon salt


    1 teaspoon white sugar


    1/2 teaspoon ground black pepper


    2 cups plain dried bread crumbs


    1 cup all-purpose flour


    2 eggs


    1/4 cup heavy cream


    2 large eggplants, peeled and sliced lengthwise into 1/4 inch slices


    1 (15 ounce) container ricotta cheese


    2 cups shredded mozzarella cheese


    1/2 cup grated Parmesan cheese


    3/4 cup chopped fresh parsley


    fresh parsley, for garnish (optional)





    DIRECTIONS


    Heat 1 tablespoon of the olive oil in a large saucepan over medium heat. Add garlic, and cook until fragrant and lightly browned. Pour in the crushed tomatoes and tomato sauce. Season with Italian seasoning, salt, sugar, and pepper. Simmer covered over medium-low heat for 30 minutes, stirring occasionally. Remove from heat and set aside.


    Preheat the oven to 400 degrees F (200 degrees C). In a large shallow dish, stir together the bread crumbs and flour. In a separate dish, whisk together the eggs and cream with a fork.


    Heat the remaining olive oil in a large skillet over medium-high heat. Dip each eggplant slice into the egg mixture, then coat with breadcrumbs. Fry each slice until golden brown in the hot oil, turning once. Drain on paper towels.


    Spread a thin layer of the marinara sauce in the bottom of a 9x13 inch baking dish. In a large bowl, stir together the ricotta cheese, mozzarella cheese, Parmesan cheese and parsley. Spread 2 to 3 tablespoons of the cheese mixture onto one side of each slice of eggplant. Roll up, and place in the baking dish seam side down. Spoon the remaining tomato sauce over the rolls. Cover the baking dish with a lid or aluminum foil.


    Bake for 30 minutes in the preheated oven. Garnish with additional chopped parsley before serving if desired.
    Eggplant is awesome on the grill. Slice it into rounds and coat with olive oil, sprinkle with salt and pepper and grill until tender. Do the same with tomato slices. Stack layers of grilled eggplant and tomato with mozzerella in between, about 3 high, and grill just until cheese melts.

    Any type of stuffed eggplant is nice. Also i can recommend cooking a tomato based sauce and mixing different types of vegetables in (including fried eggplant), which is good on top of pasta or just with a chunk of wholemeal bread!

    Some different pork recipes please?

    I dont eat pork very often as I find it rather tasteless but I am trying to widen my menu and would like some new pork recipes, spicy is ok but not over the top as I have a hiatus hernia and have to cut my spices. Nothing with nuts, coconut and olives either.

    Here's one that is excellent and I use very often. Cut a pork loin with a knife down the center but, not cutting it totally in half. Open it and begin to ';score'; the inside so that you are able to spread it out. The more slits in it, the wider and more spread out the loin will become. Then, fill it with fresh smoked gouda cheese and fresh whole spinach. Make sure you get it down into the slits that you've made. Lightly season with salt and pepper or lawry salt and roll back up. Tie it closed with cooking twine, or any kind of string will do and season the outside. Put it on low in the crock pot or low temp in the oven, add some baby red potatoes and carrots and the whole shebang will be done when you get home. Don't forget to add a little water to the pot if doing it in the oven so that it doesn't burn if you are running late! Bon Apatite!Some different pork recipes please?

    A very simple and very quick way to eat pork is to buy pork cube steak (you can get it at almost every grocery store) and buy shake n' bake for pork and make (sorta) pork chops, with mashed potatos they are absolutely tasty, the shake n' bake adds the flavor without having to whip out all the seasonings and saves time....good luck!
    I'm not sure if because you can't have olives, you can't have olive oil either. Sorry if you can't, and just ignore any of these recipes with it.     INGREDIENTS


    2 tablespoons steak seasoning rub


    1/2 cup balsamic vinegar


    1/2 cup olive oil


    2 pounds boneless pork loin roast


    DIRECTIONS


    Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.


    Preheat oven to 350 degrees F (175 degrees C).


    Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F (65 degrees C), about 1 hour. Let the roast rest for 10 minutes before slicing and serving.





    Quick, Easy -N- Fast Pork Tenderloin Parmesan Recipe





    1 lb. pork tenderloin


    3 T. bread crumbs


    1 T. grated Parmesan cheese


    1/2 t. salt


    freshly ground pepper


    olive oil, as needed


    1 small onion, chopped


    1 clove garlic, minced





    Cut tenderloin crosswise into 8 slices, about 1 inch thick.





    Flatten each slice to 1/2-inch thickness. Combine crumbs, cheese, salt and pepper. Dredge pork slices to coat. Add oil to a large heavy skillet and pan-fry meat slowly with onion and garlic about 8 minutes. If meat is done first, remove it to a plate and keep warm and continue to cook the onion and garlic until softened.

    Salt %26amp; pepper and lightly flour 8 pork chops. Brown in oil on top of stove. When browned on both sides put them in casserole. Pour 1 can cream of mushroom soup, 1 can of cream of chicken soup over them and bake in oven about 300 degrees to 350 degrees for 20 to 30 minutes.

    2 cups cooked rice

    Mix rice, cheese, and chicken. Spoon into soft shells. Roll up burrito style and cook until golden brown in a bit of butter.
    Here is one of my favorites. Take a Potato/yam and half inch cube it and pop it in the microwave for about 3min and at the same time chop half an onion with semi long cuts and saute it down with some butter once the starches are soft toss em in with the onions until they brown, add plenty of spice of your choosing. salt and pepper is fine, but i like to throw Cajun seasonings in there make it nice and spicy. Once starches are browned and onions are soft and brown put all in a bowl and then using the same pan fry 1 or 2 eggs and then put that on top of the potatoes and onions. Poor mans skillet. takes about 10min to make and is a great source of carbs and protein!!!!

    RIO GRANDE VALLEY GRAPEFRUIT PIE


    1 (9';) baked pie shell


    32 marshmallows, regular size


    1/2 c. grapefruit juice


    1 c. heavy cream, could use Dream Whip


    2 1/2 c. fresh grapefruit sections


    1/4 c. shredded coconut





    Cut marshmallows in quarters and melt them in 1/4 cup heated grapefruit juice. Cool to room temperature. Add remaining 1/4 cup juice to the grapefruit sections. Whip cream. Fold cooled marshmallows, grapefruit, and cream together. Pour into pie shell. Allow to set about 3 hours. Sprinkle coconut over pie just before serving.





    SWEET AND SOUR GRAPEFRUIT CAKE


    1 lg. pkg. yellow cake mix


    2 fresh grapefruit


    2 eggs


    1 lb. pkg. marshmallows


    Yellow food color (optional)


    Maraschino cherries





    Section grapefruits and drain juice for use in cake batter. Save sections to garnish cake. Prepare cake mix according to package. Substitute grapefruit juice for water. Bake in two 9 inch round pans. Allow cake to cool before frosting.





    Melt marshmallows in double boiler. Add few drops of yellow food coloring and stir in 1/2 cup grapefruit juice. Allow to cool slightly and spread on cake layers after baking. Garnish with fresh grapefruit sections and maraschino cherries. Makes 12 servings.





    AVOCADO - GRAPEFRUIT SALAD


    Prepare leaves of Romaine lettuce. Peel avocados and grapefruits. Arrange wedges of each on the Romaine lettuce leaves. Serve with poppy seed dressing.





    CANDIED GRAPEFRUIT PEEL


    Cut grapefruit hulls in thin slices, measure by cupfuls before boiling; cover with water and boil 20 minutes. After it strikes a boil, drain and reheat until it has been boiled 3 times.





    Place in saucepan, after draining again, with 3/4 cup sugar for every cup of peel originally measured. Put over slow fire until sugar is melted; do not use any water this time, let cook slowly until all syrup cooks away. Remove from fire; roll in granulated sugar.





    GLAZED GRAPEFRUIT


    2 fresh grapefruit, cut in 1/2


    1/2 c. brown sugar


    1 1/2 tsp. cinnamon





    Sprinkle sugar and cinnamon over halved fruit. Broil 4-inches from heat 5 minutes. Check frequently. Serve. Serves 4.





    GRAPEFRUIT TEA


    1 qt. boiling water


    3 reg. size tea bags


    2 reg.-size mint tea bags


    3/4 c. sugar


    1/2 c. lemon juice


    3/4 c. grapefruit juice

    Pour boiling water over tea bags; cover and steep 5 minutes. Remove tea bags, squeezing gently. Add sugar and remaining ingredients. Serve over ice. Yield: 2 quarts.

    Dip grapefruit sections in melted butter, roll in crushed cereal flakes, broil for a few minutes until crisp at high temperature. Insert toothpicks into each.     It really is hard to create a GOOD Frosting by substituting all ingredients. I do it if I'm just making something for me, but I ALWAYS make a PROPER Frosting if it's for someone else.





    You need to remind yourself of the GOOD, HEALTHY aspects of regular ingredients:





    Dark Chocolate has antioxidants, Use Sugar in the Raw (you can use a Coffee Grinder to make it fine), Use Organically Produced Milk, Cream or Butter.





    We need to remember that it's usually the Process in which these products are Created and Distributed that make them Un-Healthy.





    I agree with Angela Q. Use the BEST ingredients you can, eat less of it, and take an extra-long walk or bike ride to compensate.

    1 1/4 cups Splenda sugar substitute


    3 tablespoons nonfat milk


    1/2 cup butter


    1/4 teaspoon vanilla extract


    1 tablespoon unsweetened cocoa





    Directions


    1) In a medium saucepan, heat the milk and butter until butter has melted.


    2) Whisk in the dry milk, cornstarch, and Splenda.


    3) Heat the mixture and stir constantly until thickens, (do NOT let it boil).


    4) Remove from heat and let cool for 2 minutes.


    5) Add vanilla extract and unsweetened cocoa and whisk vigorously until well combined.


    6) Cool before frosting.

    Toasted Sugared Pecans


    1 egg white


    3 C. whole pecans or other whole nuts


    1 C. white granulated sugar


    1 t. vanilla


    1/4 t. cinnamon


    Parchment paper





    Beat the egg white until frothy. Add the sugar and pecans. Mix all together and spread on a cookie sheet lined with parchment paper. Put in a preheated 375 degree oven and bake for at least 8 minutes or until most pieces are golden brown. Take out of oven and separate any clumps. Cool completely. These can be eaten as is or served over pancakes, bread pudding or rice pudding.





    Waffles with Praline Pecans and Butterscotch sauce


    (A crispy, crunchy, sweet dessert)


    Make or buy 2 waffles per person


    Put a scoop of butter pecan ice cream on top of each hot stack


    Pour on some warmed butterscotch sauce (from the grocery store)

    1 (29 ounce) can sliced peaches

    Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine sliced peaches with juice, 2 tablespoons melted butter, a pinch of cinnamon and a pinch of nutmeg. Dissolve cornstarch in water, then stir into peach mixture; set aside.


    In another bowl, combine milk, sugar, flour, baking powder and salt. Beat until smooth - mixture will be thin.


    Melt 1/2 cup butter in a 9x13 inch pan. Pour batter over melted butter. Spoon peaches over batter. Sprinkle top with additional cinnamon and nutmeg.


    Bake in preheated oven for 1 hour, or until knife inserted comes out clean.


    Yield: 18 servings





    If you want you can serve with a scoop of vanilla Ice Cream.

    Fruit pizza. Buy one roll of sugar cookie dough. Spread it out like you would a pizza crust into the bottom of a cookie sheet. Bake for 10 minutes. Let cool for another 15 minutes. While the cookie dough is baking, mix together 1 package of cream cheese, 1 small can of marshmallow whip. When the cookie dough is cooled, spread the cream cheese mixture over it. Then top with any fruit you like. I usually put sliced strawberries, kiwi, blueberries on it. You could also use pineapple, blackberries, raspberries, etc. Everyone I know loves this when I make it and it's super easy!

    APPLE FRENCH BREAD BAKE


    6 tablespoons butter


    8 ounces French bread, loaf(with crust)


    1 1/2 cups brown sugar, packed


    1 cup water


    1 teaspoon cinnamon


    2 tablespoons butter


    2 large apples


    6 ounces cream cheese, 1/2 inch cubes


    1 cup walnuts, chopped


    whipped cream or vanilla ice cream





    Directions


    Preheat oven to 350 degrees. Cut bread into 3/4 inch cubes. Place 6 tbsp butter into bottom of a large baking pan. Melt in oven. Add bread cubes and toss to coat evenly. Bake bread until crisp and slightly browned, stirring occasionally (about 20 minutes). Remove bread from oven and raise temp to 400 degrees. Simmer brown sugar, water, and cinnamon in a saucepan until the sugar is dissolved and it is syrupy (about 5 minutes). Add 2 tbsp butter to mixture while hot and stir until melted. Peel and core apples and cut into a small dice. Combine apples, bread cubes, cream cheese cubes, and walnuts. Pour syrup over all and toss to coat. Butter a 9x13 inch dish well. Pour mixture into buttered dish and spread evenly. Bake in 400 degree oven for 40 minutes. If browning too quickly, loosely cover with aluminum foil. Serve warm topped with whipped cream or ice cream!

    Vegetables in Chili Lemon Chicken Broth/ Chicken/Fish Fillet








    4 cups chopped celery, 1 inch pieces


    2 cups chopped chopped yellow red green peppers


    1 cup chopped onions


    2 tablespoons olive oil


    3 chicken bouillon cubes or chicken base


    3 cups water


    1 tablespoon chili powder


    1 tablespoon lemon peel


    1 teaspoon lemon juice


    4 boneless chicken fillets or boneless fish fillets





    Preheat oven 375 degrees.


    Chop the vegetables.


    Pour olive oil in large 4 quart glass casserole dish with lid.


    Put the vegetables in dish.


    In small saucepan heat the water and chicken boullion cubes or chicken base to make chicken broth. Bring to a boil.


    Pour broth over the vegetables.


    Add chili powder and lemon peel and stir.


    Cover, bake 20 minutes.


    Check and stir once during the cooking time.


    Add fish or chicken fillets on top.


    Bake 20 minutes turning the fillets once.


    Place thick fish fillets on top,not thin or they may break apart. Vegetable broth may be used to serve over rice or potatoes. Serve in the baking dish.What are good recipes for chicken?
    How about Chicken Cordon Bleu? Flatten the chicken breast out. Sprinkle inside with salt and pepper then layer some swiss cheese and ham inside (maybe some spinach leaves too if you have them). Fold over, secure with toothpick and then bake in the oven.





    In fact, sometimes I like to stuff the chicken with mozzerella and pepperoni, then cook and then smother with some spaghetti sauce served over pasta.





    I love stuffing chicken breasts cause you can stuff with practically anything, its easy and its seems somewhat fancy even thought its really not!
    I like to take 6 thighs and skin and wash them.Put in large deep skillet.Fry down with lid on.Add 1 can stewed tomatoes,1/2 cup chopped onions,1/2 bell pepper,3 cups zuchini squash(sliced).Once all is in pan sprinkle garlic powder,onion powder and salt on top.Make sure to add enough water to cover all.Serve over rice.
    Place chicken pieces in an oven proof baking dish.I like using bone in and the skin on as it's more flavourful,but your choice.Boneless skinless is fine also.


    Sprinkle generously with lemon pepper and a bit of salt.


    Bake till almost done and golden brown.


    Add a can of cream of mushroon soup (not diluted) to the chicken and finish baking till chicken is well done.


    Delicious.


    I serve this with a green veg (green beans,peas etc.) and rice or noodles using the sauce from the soup for the rice etc.

    In a small bowl mix a table spoon of salt, tablespoon of crushed rosemary, a table spoon of sage (or oregano). Rub the salt and the herbs together with your fingers. Now, rub this inside and out side of the chicken. Wrap in the foil leaving the crease on the top side (so you can easily unfold and peek into in about an hour. Put the foil package on a shallow oven pan and place into a hot oven for about an hour + until cooked.

    Mexican grilled shrimp cocktail!





    Take a bunch of jumbo shrimp and toss them in a ziplock with some olive oil, OJ, lime juice and zest, tequila, garlic, chopped green onions and cilantro, a little salt and pepper. Let marinate in the fridge for a couple hours.





    Meanwhile, take a jar of your favorite salsa and add a tsp. of raw horseradish, some lime juice and zest, and chopped cilantro.





    Then just grill (stove or Forman grill) the shrimp for a few minutes and serve with the zippy salsa. My hubby and I had this at a very nice restaurant and just had to recreate it at home, that's how good it is.

    Salmon Bake


    1 x 415g can pink salmon (drained and mashed)


    2 cups cooked macaroni noodles


    陆 cup onion finely diced


    戮 cup grated reduced fat tasty cheese


    陆 cup frozen corn kernels


    陆 cup red capsicum finely diced


    1 cup skim milk


    2 egg whites


    1 whole egg


    3 tbsp chopped parsley


    陆 tsp dried dill


    1 tbsp lemon juice


    cooking spray





    Preheat oven to 180掳C fan forced. In a large mixing bowl beat milk, egg white and egg together. Add all other ingredients except for the macaroni noodles and cheese, mix well. Fold in the cooked macaroni





    noodles and 2/3 of the cheese, combine together. Pour mixture into a quiche or pie dish that has been coated with cooking spray. Sprinkle remaining cheese over the top. Bake for 45 minutes or until browned and set in the middle. Serve hot or cold.





    This dish is great in lunch boxes cold or heated in the student microwave and is very budget friendly.

    Here's a cheeseburger casserole recipe that I created. We all love it, including our 5 year old. You might want to double it for your neighbors because their family is so large. :





    1 lb. ground beef


    1/4 onion, minced


    1 cloves garlic, minced


    14 1/2 oz. can diced tomatoes


    2 cups raw macaroni, (cook according to package directions and drain)


    1 can Campbells Cheddar cheese soup


    salt %26amp; pepper to taste





    Saute the onion and garlic in a little olive oil. Add the ground beef and brown. Add the diced tomatoes, including the liquid in the can. Simmer until the liquid is mostly reduced...5 to 10 minutes. Stir in the macaroni and Cheddar cheese soup. Heat through.I want to cook something amazing for my boyfriend but I don't know any good recipes. Suggestions?
    You can do either a Chicken Fettuccine Alfredo for him or make him some steak.





    For the chicken Alfredo, you'll need skinless boneless chicken breast, cook them (you can pan fry or grill) and cut into small pieces. You'll need fettuccine noodles, just boil them, then drain out the water. You can purchase Knorrs Pasta Sauces (they have Alfredo sauce) for only 99 cents, and add a packet onto the fettuccine along with like 陆 cup milk and some margarine. The packet of Alfredo sauce will give you better instructions for that. Then throw in the cut up chicken and serve with a bit of Parmesan cheese and parsley flakes over top. Serve with Texas toast garlic bread.





    If you want to make a steak, season it with steak marinade and McCormick steak seasoning and then pan-fry. Serve with baked potatoes (which can be microwaved) and some steamed broccoli or canned corn.I want to cook something amazing for my boyfriend but I don't know any good recipes. Suggestions?
    How about Chicken Parmesan?


    Preheat oven to 350.


    Take chicken breasts, trim the fat, rinse in water, pat dry. Then, flatten them out with either a meat mallet or even a pan to about 1/4 inch. You can put them in a ziplog bag to keep it in one place.


    Cover the bottom of a pan with olive oil and put on medium/medium high heat.


    Then set up breading station. Have a plate full of flour, a bowl of 1 beaten egg (maybe 2), then a plate with Italian style breadcrumbs mixed with parmesan cheese.


    Lightly cover chicken with flour. Then dip in the egg. Then cover wtih breadcrumbs. Once you do this with all the chicken put the chicken in the pan and brown on each side. Don't let the chicken cook all the way through.


    Put tomato sauce on the bottom of a casserole dish. Then put the chicken pieces. Cover with more sauce and add mozzarella cheese or any Italian cheese mixture you like (provolone, parmesan, romano, etc.). Bake until the cheese melts and the chicken should be done at that time too.


    For dessert, you can cook sliced strawberries with balsamic vinegar and sugar on the stove. It's really good over vanilla ice cream.
    Men love meat so I suggest making a slow cooked pot roast. You take a chuck roast, cut slices all over it and put chunks of garlic in it. Next you will want to brown the meat on both sides with some olive oil. Put the roast in a large baking pot with carrots, onions, mushrooms, potatoes, red wine and beef broth (1:1 proportion) cover and cook at 300 degrees for 2 and half to three hours (the longer you cook it the more tender the meat will be). The most important thing to remember is absolutely do not take the cover off of the pot until you are done cooking it. I have never met anyone, especially any man that does not love this recipe, I know your boyfriend will love it too!
    Lemon Shrimp Pasta Salad

    12 servings, 3/4 cup each3 cups (8 oz.) farfalle (bow-tie pasta), uncooked 1 lb. fresh asparagus spears, cut into 2-inch lengths 1 cup KRAFT Light Zesty Italian Reduced Fat Dressing 1 tsp. dried oregano leaves 1 tsp. grated lemon peel 1 lb. cooked large shrimp (20 to 25 count) 1 cup halved cherry tomatoes 1 pkg. (8 oz.) KRAFT Natural 2% Milk Reduced Fat Colby %26amp; Monterey Jack Cheese Crumbles COOK pasta as directed on package, adding asparagus to the cooking water for the last 3 min. of the pasta cooking time; drain. Rinse with cold water; drain well.





    MEANWHILE, mix dressing, oregano and lemon peel.





    PLACE pasta mixture in large bowl. Add dressing mixture, shrimp, tomatoes and cheese; mix lightly. Serve immediately. Or, cover and refrigerate until ready to serve.
    I cooked once for mine carribean jerk chicken and the flavor blew him out of the water. I got the recipe from AllRecipes.com, but left the peanuts out and used less peanut sauce.


    I'll mention because it was so funny at the time that the best he could do was a dish of macaroni and hot dogs-yech!
    Try making a carbonara dish, but with a little twist, instead of adding mushrooms, add tuna instead. uhmm.. its nice if you could spice it..just a little bit atleast. gives the extra taste. and for dessert..a cheesecake would be the best :P hehe

    Get a whole trout, stuff it with tasty vegetables (whatever seems like it would be nice. I use chopped plum, spring onion, grated carrot, ginger and lime juice, but you could use anything).





    Wrap the whole stuffed trout in foil and bake at the same heat you would roast a chicken at, for about forty minutes. You'll have a tasty and very spectacular dish that is also easy and very forgiving if you don't cook often. Whole trout is impressive, but stuffed baked trout is easy to get right.





    I suggest something almondy for dessert, and then you can use the almonds as part of the trout stuffing, since trout and almonds is a traditional combination.

    1 cup catsup


    1 12oz. can cola (pepsi, coke, etc.)





    Put chicken in a non-stick pan.


    Mix together catsup and cola, pour over chicken.


    Bring to a boil. Cover, reduce heat and cook 45 minutes.


    (turning chicken a few times, while cooking...to prevent from


    sticking to pan)


    Uncover, turn up the heat and continue to cook until the sauce


    becomes thick and adheres to the chicken.


    It turns into the most incredible BBQ sauce. Yummmm!





    You can double the recipe and use more pieces of


    chicken....wings...would be ideal...add some hot


    sauce....presto ';Hot

    I found another variation.....omit the catsup and add a small

    the catsup) %26amp; Cola........still turned out really tasty (to me)...might

    but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).





    Finally....!! I fixed the 'SALSA' chicken......that's good , too.





    Another (bright)idea.....I thought of trying......replace the


    catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!


    Fixed the shrimp with cocktail sauce......eh...wasn't all that


    great...was OK...probably won't be fixing it again.





    Also tried beef stew cuts......that was pretty good.....I can see


    myself making this again.

    CRUNCHY ONION CHICKEN





    1 1/3 cups French鈥檚 Original French Fried Onions


    4 boneless skinless chicken breast halves


    1 egg, beaten





    LIGHTLY CRUSH:





    Onions in a plastic bag.





    DIP:


    Chicken in egg





    COVER:


    With onion crumbs, press firmly to adhere to chicken.





    BAKE:


    Preheat oven to 400 degrees.


    Place chicken on lightly greased baking pan.


    Sprinkle with additional onion crumbs, if desired.


    Bake for 20 minutes or until no longer pink in center.








    Mushroom Chicken





    4 boneless/skinless chicken breast (or any pieces you like)


    1 can cream of mushroom soup.


    1 can water





    Place chicken in crock pot (or sauce pan for stove top cooking)


    mix soup %26amp; 1 can of water together


    pour over chicken


    cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.





    Serve over noodles or rice or dressing....or???

    EASY BEEF STROGANOFF





    Ingredients:





    3/4 lb lean ground beef


    1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)


    1 can mushrooms, drained (7 oz can)


    1/2 cup sour cream


    4-6 cups hot cooked noodles


    salt %26amp; pepper, to taste





    Instructions:





    In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.





    Preparation Time: 1-15 minutes


    Cook Time: 25+ minutes











    POT ROAST


    Your choice of beef (to fit crock-pot)


    1 pkg. dry Ranch dressing mix


    1 pkg. dry Italian dressing mix


    1 pkg. dry Brown Gravy mix


    1 cup water


    Put beef in pot.


    Mix together all the dry mixes鈥?then add water 鈥our over meat and cover %26amp; cook on high 4-6 hours.


    Until meat is tender.


    The first time I mad it I didn鈥檛 have the Italian Dressing mix鈥?so I added a pkg. of Onion Soup Mix鈥?I have to say I liked that better.


    If you use more water you might want to add more Brown Gravy mix鈥?to make a thicker sauce. Was gonna add


    potatoes and carrots鈥ut never got around to it.

    Cool Whip for top (optional)





    1. In a medium bowl mix Kool-Aid and condensed milk, thoroughly.

    5. Chill for a minimum of 4 hours.

    1 1/2 cups chopped onions


    3/4 cup chopped carrots


    3/4 cups chopped celery


    4 cloves garlic, smashed


    3 bay leaves


    1 cup distilled white vinegar


    3 lemons, quartered and juiced


    3/4 cup salt


    2 tablespoons cayenne pepper


    2 (1 1/4-pound) lobsters


    8 cups mache or a chiffonade of mixed greens


    Cilantro-Avocado Dressing, recipe follows


    1 1/2 cups halved teardrop tomatoes


    1 1/2 cups diced hearts of palm


    1 1/2 cups orange segments, white pith removed


    Fresh cilantro sprigs, for garnish





    Set a 6-quart stockpot with 1-gallon of water over high heat and bring to a boil. Add the onions, carrots, celery, garlic, bay leaves, vinegar, lemons and juice, salt and cayenne pepper. Bring the pot to a boil and allow to cook for 15 to 20 minutes. Place the lobster into the water and cook until red and cooked through, about 7 to 8 minutes. Immediately immerse in ice water to halt the cooking. Once the lobsters have cooled, remove from the water and set aside.





    Use a chef's knife to crack the shell of the lobsters and remove the tail meat and claw meat. Chop the lobster into 1/2-inch pieces, and set aside. Place a sixth of the greens into each of 6 large chilled martini glasses. Drizzle a little of the dressing over the greens. Place 1/4 cup of the tomatoes in each of the glasses, as well as 1/4 cup of the hearts of palm, 1/4 cup orange segments and a sixth of the chopped lobster. Drizzle more of the dressing over the parfait and garnish with fresh cilantro sprigs. Serve immediately.





    Cilantro-Avocado Dressing:





    1 ripe avocado, diced


    2/3 cup mayonnaise, preferably homemade


    1/2 cup packed cilantro leaves, blanched and drained


    1 1/2 tablespoons orange juice


    1/2 lime, zested


    1 to 2 limes, juiced (4 to 5 tablespoons)


    1/2 teaspoon salt


    1/4 teaspoon white pepper


    1/4 teaspoon green hot sauce, or to taste





    Combine all ingredients in a food processor and process until smooth.





    Yield: about 2 cups





    Cook's Note: Any leftover avocado dressing makes a great dip for chips or veggies!








    CREAMY CAJUN CHICKEN PASTA





    Ingredients


    2 boneless skinless chicken breast, cut into thin strips


    4 ounces linguine, cooked al dente


    2 teaspoons cajun seasoning


    2 tablespoons butter


    1 thinly sliced green onion


    1-2 cup heavy whipping cream


    # 2 tablespoons chopped sun-dried tomato


    # 1/4 teaspoon salt


    # 1/4 teaspoon dried basil


    # 1/8 teaspoon ground black pepper


    # 1/8 teaspoon garlic powder


    # 1/4 cup grated parmesan cheese


    Directions





    1. Place chicken and Cajun seasoning in a bowl and toss to coat.


    2.In a large skillet over medium heat, saut茅 chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.





    3. Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.


    4. Pour over hot linguine and toss,with Parmesan cheese.

    1/2 cup unsalted butter, melted


    1 (12-ounce) package semisweet chocolate chips


    2 cups whipping cream, divided use

    1/4 cup granulated sugar


    4 large eggs


    3/4 cup cherry liqueur


    1 teaspoon almond extract


    1 (21-ounce) can cherry pie filling





    1. In a large bowl, combine chocolate wafer crumbs and melted butter. Pat firmly into a 9-inch springform pan, covering the bottom and halfway up the sides; refrigerate while preparing filling.


    2. Preheat the oven to 325掳F (160掳C).


    3. In a double boiler over hot (not boiling) water, melt chocolate chips and 11/2 cups cream; stir until smooth. Set aside.


    4. In a large mixing bowl, combine cream cheese and sugar, beating until fluffy. Add eggs, one at a time, beating well after each addition. Add the chocolate mixture, cherry liqueur, and vanilla; mix until blended. Pour into the prepared crust.


    5. Bake for 60 minutes. Turn the oven off and let stand in oven with door open for 1 hour. Remove from oven, wrap and refrigerate overnight.


    6. Spread cherry pie filling over the top of cheesecake 1-inch from the edge. Decorate the edge with remaining cream whipped to soft peaks.
