Salmon croquettes

14oz cold mashed potato

14oz canned red or pink salmon, drained

1 teasp grated lemon (optional)

1/2 oz melted butter

Salt %26amp; Pepper

1 tabsp chopped Parsley

1 beaten egg

For Frying

2 eggs

dried breadcrumbs

Vegetable oil for frying

Method

Mix all the Salmon croquette ingredients together in a bowl.

Cover a baking sheet or large plate with cling film.

Take a small handful of the croquette receipe* and shape into fat discs about the size of your palm, (there should be enough to make about 8)

Pop each one onto the cling film and refrigerate for up to 1 hour or until firm.

Beat the 2 eggs in a shallow bowl and pour the breadcrumbs either onto a plate, or do as I do, save on washing up and mess, just put them into a plastic bag.

Dip each salmon croquet into the egg and roll around the breadcrumbs (if you鈥檝e put the breadcrumbs into a bag pop the croquet inside, close the top and shake until covered). Continue until all the croquettes are covered.

Heat the vegetable oil in a frying pan and when hot fry the croquettes on each side until golden.Any good recipes for canned salmon?
Salmon pie:

Combine large can of salmon with about 2 cups mashed potatoes and a couple tablespoons chopped dill. Add a tablespoon of dijon mustard if you have it. Sautee a medium sized onion and add it to the mixture. Add a pinch of salt and pepper. Mix together until salmon is very finely broken up. Cook inside a crust until the crust is golden brown.

This is a favortie French-Canadian recipe in my family. I actually like it a little better with fresh salmon, but canned salmon works just fine too.
salmon patties. take the salmon from the can. take the bones out of the middle, and the skin from the outside. Mix it with one egg, per can, bread crumbs, chopped onions and seasoning. fry in a skillet with just a little oil. Enjoy.
Salmon Patty's.

1 can of salmon.

1/4 c. bread crumbs.

1 egg.

Mix all of above together %26amp; cook in a skilit with a little oil.

For about 3 min on each side.

Hope this helps.
Yes. Take 1 or 2 cans of salmon, ad to one large trash can. Let sit for a few days until trash day. Remove trash from house, place in garbagee bin and place at the curb. Once the trash man comes you are done! Enjoy!
A couple of eggs, crush some saltines (or you could use bread crumbs), you cal also cut up celery if you like-mix together with salmon in a bowl and form into a pattie. Fry in pan over mediuam heat to create-salmon burger or salmon patty. Yummy!
Many of the recipes look almost the same....but the one ingredient that makes a salmon patty the best is cornmeal

Remove all bones and skin from large can of salmon

2 TBLS minced dried onion--OR small onion finely diced by hand

3/4 cup self rising cornmeal

2 eggs, well beaten

1/4 tsp black pepper

Stir all ingredient together very well.....shape into golf ball size balls.....flatten between palms to about 1/2 - 3/4 inch thick

Heat extra virgin olive oil....about 1/4 cup in skillet....Fry patties on each med high heat....Cook on each side until crunchy and browned
saute garlic, onion and tomatoes...

add in the salmon, salt and pepper

then squeeze in about 1/4 juice of a lemon..

you can serve it with saltines, or steamed rice

*opt. add some fried cubed potatoes

goodluck
here is another French Canadian one,

smush the salmon and cook it in a warm pan sprayed with cooking spray or butter, use some of the salmon juice and shake up with a bit of lemon juice and cornstarch...it makes a sort of gravy...

serve with some mashed potatoes and peas and you have a quick supper, season as desired with dill, sea salt and fresh cracked black pepper...
