Does anyone know any good spring roll recipes?

I'm looking for an easy vegetarian spring roll recipe where I make the wrapping, not buy it.Does anyone know any good spring roll recipes?
you could steam a cabbage leaf and wrap it with that





or this is a pretty good, basic recipe for actual wrappers





Ingredients:





1 cup all-purpose flour


1/4 teaspoon salt


3/4 cup water* (see note below)


cooking spray, as needed


Preparation:





In a large bowl, stir the salt into the flour. Mix the water into the flour to form a batter. Cover and let rest for 1 hour.


Spray a non-stick pan with cooking spray and heat on medium low heat.


Turn the heat down to low and add a heaping tablespoon of the batter to the middle of the pan. Quickly spread the batter out evenly to form a circle 5 - 6 inches in diameter. Continue smoothing out the batter as the skin cooks.


Cook the skin briefly, until it is cooked on the bottom and the edges curl slightly. Take care not to overcook. Remove carefully and refrigerate or freeze until ready to use as called for in the recipe.





*The amount of water needed will depend partly on factors such as the age and dryness of the flour, the altitude you are cooking at, etc. The batter should be well mixed and fairly thick, but still thin enough to drop off the back of a wooden spoon.Does anyone know any good spring roll recipes?
BAKED PORK SPRING ROLLS





1/2 pound ground pork


1 cup finely shredded cabbage


1/4 cup finely shredded carrot


2 green onions, thinly sliced


2 tablespoons chopped fresh cilantro


1/2 teaspoon sesame oil


1/2 tablespoon oyster sauce


2 teaspoons grated fresh ginger root


1 1/2 teaspoons minced garlic


1 teaspoon chile sauce


1 tablespoon cornstarch


1 tablespoon water


1 (16 ounce) package spring roll wrappers


4 teaspoons vegetable oil





Preheat oven to 425掳F.





Place pork in a medium saucepan. Cook over medium high heat until evenly brown. Remove from heat and drain.





In a medium bowl, mix together pork, cabbage, carrot, green onions, cilantro, sesame oil, oyster sauce, ginger, garlic and chile sauce.





Mix cornstarch and water in a small bowl. Place approximately 1 tablespoon of the pork mixture in the center of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close.





Moisten fingers in the cornstarch and water mixture, and brush wrapper seams to seal.





Arrange spring rolls in a single layer on a medium baking sheet. Brush with vegetable oil.





Bake in the preheated oven 20 minutes, until hot and lightly browned. For crispier spring rolls, turn after 10 minutes.





Makes 12 spring rolls.

Spring rolls are a quick, no cook meal and are surprisingly easy to make. Be sure to make a dipping sauce to serve along with your spring rolls! If you need some extra help, see my pictures showing how to roll spring rolls.


Prep Time: 15 minutes


Ingredients:





* Spring roll wrappers


* 1/2 cup bean sprouts


* 1/3 head of green cabbage, chopped


* 5 green onions, chopped


* 1 cup thin noodles, pre-cooked (use rice, Chinese or bean thread noodles)


* 1/4 cup fresh herbs (use cilantro, basil or mint, your choice)


* 1/4 cup carrots, grated or julienned


* 1 tbsp lime juice


* 1 tbsp soy sauce


* 1/2 tsp fresh ginger, grated (optional)





Preparation:


Toss together all ingredients together except wrappers in large bowl. Submerge wrappers in hot water until pliable, about 15 seconds. Place about 2 tablespoons of mix on wrapper and wrap your spring rolls. Serve with dipping sauce and enjoy!

VEGETARIAN SPRING ROLLS





20 sheets spring roll wrappers


2 carrots


1 white cabbage


1 cup dry flavoured soy mince


300 g beansprouts


salt pepper


oil for frying


for dip:


soy sauce


white vinegar





Shred carrots and cabbage. Add beansprouts. Soak soy in a little bit of water untill damp. Add soy to mixture; salt and pepper to taste.


Wrap into spring roll sheets and then fry in oil.
