Heres a couple of ones i like





Tex-Mex Won Tons





1/2 lb. hamburger





1/4 c. chopped onion





2 tbsp. chopped green peppers





cooking oil for deep frying





1/2 of a 15 oz. can refried beans





1/4 c. shredded cheddar cheese





1/4 tsp. ground cumin





taco sauce





4 doz. won ton skins (egg roll)





1 tbsp. catsup





1 1/2 tsp. chili powder





In a large skillet cook hamburger until browned and onion and green pepper until tender. Drain. Stir in beans, cheese, catsup, chili powder and cumin into meat mixture. Mix well.





Place a won ton skin with one point toward you. Spoon in a generous tsp. of meat mixture on center of skin.





Fold bottom point of skin over filling; tuck point under filling.





Fold side corners over, forming an envelope shape.





Roll up toward remaining corner; moisten point and press to seal.





Repeat with remaining won ton skins and filling.





Fry a few at a time in deep fat fryer (375 degrees) about a minute per side.





Use a slotted spoon to remove won tons. Drain.


Serve warm with taco sauce.





Makes 48





Freeze leftovers.





Reheat, covered loosely----350 degrees for 10-12 minutes.











Baked Shrimp Balls





2 pounds shelled, deveined shrimp, minced


6 canned water chestnuts, finely chopped


2 Tbsp. ginger, finely chopped


1 onion, chopped


2 egg whites


1 tsp. cornstarch


3 tsp. olive oil


pepper for taste


lemon wedges





Place everything but lemon wedges into a bowl and mix together.





Shape mixture into small balls. Place on a lightly greased cookie sheet. Spray balls with olive oil and bake at 350潞 for 20 minutes.





Serve hot with lemon wedges








Chicken Enchilada Puffs


1 package frozen Puff pastry dough





2 boneless chicken breasts





8 oz. package grated pepper jack or cheddar cheese





1 onion diced





1 stalk celery diced





2 cloves garlic minced





1 small can diced mild green chilies





1/2 C. crushed corn tortilla chips





1/2 C. chicken broth





1/2 t. ground cumin





1 t. chili powder





Oil





salt and pepper to taste





1 egg beaten with 1 T. water





Your favorite salsa





Heat about 2 tablespoons of oil in a large saut茅 pan over medium-high heat. Season the chicken breasts lightly with salt and pepper, add them to the pan, and cook until golden brown on both sides, about 5 minutes per side. Remove the chicken to the cutting board to cool.





Meanwhile, add the onions, celery and spices to the oil that remains in the pan. Add a little more oil if necessary. Saut茅 until the onions are soft. Add the garlic and cook until just starting to brown.





Add the chilies and chicken stock to stop the browning process and to collect the browned bits of flavor off the bottom of the pan, scraping the pan with a wooden spoon. As this is coming up to a boil, dice the chicken breast into a small dice and return the chicken to the pan. Add the crushed tortilla chips.





Continue to cook until almost all of the liquid is evaporated. Taste and adjust seasoning with salt and pepper. Remove from the heat and chill completely in the refrigerator. When the mixture is cold, add the grated cheese and mix well.





Dust your counter with a little flour and spread out the puff pastry. Lightly brush the pastry with the egg/water mixture. This will help seal the folded puff. Use a sharp knife or a pizza cutter, cut the puff sheets into 2-inch by 2-inch squares. Place one tablespoon of firmly packed filling into the center of each square. Fold corner to corner, and crimp with a fork. Place on a sprayed cookie sheet about one inch apart. Cover and refrigerate until party time.





Preheat oven to 400掳F. Bake for 15 to 20 minutes or until golden brown. Serve with your favorite salsa.

Take thin slices of smoked turkey (or ham) spread w/cream cheese, and roll around a green onion.





Buy a bag of frozen meatballs ( or make your own, but that defeats the whole ';easy'; part) put in 9x13 baking dish. In medium sized saucepan mix together 1 bottle of Heinz Chili sauce, one 12oz bottle of grape jelly, and one teaspoonfull of lemon juice. Heat till jelly is melted, pour over meatballs and bake for 30-45 min at 350. ( it sounds awful, but they are delicious!)
Cocktail smokies wrapped in crossant dough w/cheese. Actually, cheese and different cracker cubes are good. Also, serve them w/pepperoni and lunchmeats. Pizza rolls in the freezer section are quick and easy. Chips and cheese dips work.
APPETIZER PARTY PINWHEELS





1 (8 oz.) sour cream


1 (4 oz.) can diced green chilies, well drained


1 c. grated Cheddar cheese


5 (10 inch) flour tortillas


1 pkg. (8 oz.) cream cheese, softened


Garlic powder to taste


Seasoned salt to taste





Mix all of the filling ingredients together thoroughly. Divide the filling and spread evenly over the tortillas; roll up tortillas like a jelly roll. Cover tightly with plastic wrap, twisting ends; refrigerate several hours. Unwrap; cut in slices 1/2 to 3/4 inches thick. Serve with salsa or picante sauce.

2 (8 oz.) pkg. cream cheese, softened


1 pkg. Hidden Valley Ranch Milk Recipe Original Ranch Salad Dressing Mix


2 green onions, minced


4 (12 inch) flour tortillas


1/2 c. diced red pepper


1/2 c. diced celery


1 can sliced black olives, drained





Mix first 3 ingredients. Spread on tortillas. Sprinkle on remaining ingredients. Then roll and wrap tightly in plastic wrap. Chill at least 2 hours. Cut as thick as you like - 1/2 to 1 inch slices.








PEPPERONI PARTY APPETIZERS





1 can cream of celery soup


8 oz. cream cheese


2 c. diced pepperoni


1 sm. pkg. rye bread





Cream the cream cheese. Stir in cream of celery soup. Stir in diced pepperoni. Spread mixture on small party rye. Bake at 350 degrees for 15 minutes. Freezes well.








EGG AND BACON APPETIZERS





1/4 c. mayonnaise


1 tbsp. milk


1 tsp. salt


1/4 tsp. pepper


8 bacon slices, fried %26amp; crumbled


6 hard cooked eggs, coarsely chopped


Party rye bread


Paprika





Early in the Day: In medium bowl stir mayonnaise, milk, salt and pepper until mixed. Stir in bacon and eggs. Cover and refrigerate.





To Serve: Spread mixture on rye bread. Sprinkl








GOLDEN DELIGHT APPETIZERS





12 slices white bread or party rye rounds


butter


3 c. shredded cheddar cheese


1 c. chopped, cooked shrimp


3/4 c. mayonnaise


1 tsp. Worcestershire sauce


1/2 tsp. curry powder


Paprika


2 tbsp. lemon juice





Trim crusts from white bread or use rye rounds as they are. Spread slices with butter. Combine cheese, shrimp, mayonnaise and lemon juice. Add Worcestershire sauce and curry powder. Spread dry side of bread with mixture, place butter side down on cookie sheet. Bake at 400 degrees for 10 minutes.








RYE TOAST APPETIZERS





1 (3 oz.) can Parmesan cheese


1/2-3/4 c. mayonnaise


1/8 c. grated onion


1/2 tsp. garlic salt


Sm. loaf party rye bread


Fresh or canned mushroom slices, drained





Mix and spread on party rye. Garnish with mushroom slices. Broil, being careful not to burn.








CHEESE AND SHRIMP APPETIZERS





Party bread


1 (4 1/2 oz.) can shrimp, drained and chopped


1 c. shredded Swiss cheese (4 oz.)


1/2 c. mayonnaise


1 tbsp. milk


1/2 tsp. dried dill weed





Toast bread lightly. In small bowl, stir together shrimp, cheese, mayonnaise, milk, and dill weed. Spread shrimp mixture on toast. Broil 6 inches from source of heat 3-4 minutes until hot and bubbly. Garnish with parsley. Yields: Approximately 30.

Spinach Dip in Bread Bowl:





1 cup mayonaise


1 cup sour cream


1 can water chestnuts, drained and chopped


1 10oz package frozen spinach, defrosted and drained thoroughly (squeeze out excess water)


1 package Knorr Vegetable Soup Mix


1 loaf, unsliced, sourdough bread, hollowed out (keep bread pieces to use in dip)





Mix the above together and place in breadbowl. Chill for several hours before serving.





Bacon Cream Cheese Pinwheels:





1 can Pillsbury Crescent Rolls


1 8 oz package cream cheese


5 slices platter bacon, chopped and sauteed until crisp, drained.


1/3 package Knorr Vegetable Soup Mix


3 T sour cream





Mix softened cream cheese with soup mix, bacon and sour cream. Set aside to ';mellow'. Remove crescent dough and connect seams. Roll out into a rectangle and spread with cream cheese mixture. Roll up jelly roll style and place on greased baking sheet. Score in 6 -10 areas and place in 350 degree oven. Bake until puffed and golden. Slice where scored and serve warm.





Hot Artichoke Dip





2 cans quartered artichoke hearts


1 can diced green chilis


1/2 cup mayonaise


2 cups shredded parmesan


1/2 tsp hot sauce





Chop artichoke hearts and mix with chilis, mayonais, hot sauce and parmesan. Place in baking dish and bake at 350 degrees for 40 minutes or until bubbling and golden brown. Serve with blue corn tortilla chips.





Prawns with Cocktail Sauce:





On large platter, arrange red leaf or green leaf lettuce leaves.


Hollow out a yellow or orange bell pepper and place cocktail sauce in it. Place in center of platter.


Layer two pounds of Colassal Prawns on platter in decorative manner.


Cut fresh lemons into slices and use as garnish.
Fried Ravioli





These are addictive bites of fried pasta and cheese goodness. They are also easy to make ahead of time and keep in your freezer. Your guests will be so impressed! Here's what you need:





1 package of your favorite refrigerated ravioli (I love spinach and cheese for this recipe.)





1 raw egg, scrambled in a bowl with a few tablespoons of water (an egg wash...)





Breadcrumbs





Grated Parmesan cheese (Yes, the kind in the can is fine.)





Oil for frying





Marinara Sauce for dipping (Just use your favorite jar from the store.)





If you aren't using pre-seasoned breadcrumbs, then add salt and pepper to them to season them yourself. You can add Parmesan cheese to the breadcrumbs for extra flavor. Dip each ravioli in the egg wash, and then in the breadcrumbs to coat. When they are all coated, set them aside. Put enough oil in the bottom of a frying pan to coat the bottom, maybe 录'; deep, and heat it until it is hot enough to fry the ravioli (They will sizzle when you carefully place them into the pan.). Cook the ravioli a few at a time. You don't want to crowd the frying pan. Use all of the usual precautions required for cooking with hot oil. When they are brown on one side, flip them and cook the other side. They will puff up, so be careful to remove them from the pan before they burst. Have a rack ready for draining and cooling. While they are still hot, sprinkle them with Parmesan cheese as they cool on the rack. When all of your ravioli are cooked, spread them on baking sheets in a single layer, taking care to make sure that they are not touching each other. Put the baking sheets in the freezer for twenty to thirty minutes, until the ravioli have started to freeze. Then, remove them and place them into plastic freezer bags. . (This two-step freezing process will keep them from freezing together in clumps.) When it is time to serve your ravioli, just place them on a baking sheet and reheat in a 350 degree oven for about 8 minutes, or until the centers or hot. Now, serve these tasty appetizers with some marinara sauce for dipping and enjoy!





Crock-Pot Cocktail Franks in Sauce





Yummy! Mini hot dogs are always a hit, but this is a grown-up version that is easy to make from ingredients you most likely have on hand. If you keep a package of cocktail franks in your fridge, you'll be prepared for drop-in guests anytime. It only takes a few minutes to put this simple dish together. Here's what you need:





1 cup of ketchup





1 cup of brown sugar





3 tablespoons of mustard (use spicy mustard if you want to give it a kick)





2 teaspoons of Worcestershire Sauce





1 clove of garlic, pressed or finely minced





a dash of seasoned salt (regular salt will work, too)





a dash of pepper





1 14 to 16 oz. package of cocktail franks





Combine all of the ingredients, except for the franks, in a crockpot. Once you have the sauce mixed together, add the cocktail franks. Turn your crockpot on and let the franks and sauce simmer. It is best to make this dish at least an hour ahead of time. Once the franks are heated through, you are ready to serve this simple appetizer.

Guacamole-





Nothing quite like fresh, homemade guacamole for your tortilla chips!

2 medium ripe avocados, pitted, peeled and mashed





1/3 cup hot thick and chunky salsa





1/4 cup sour cream





2 tbsp. finely chopped onion





1 tbsp. chopped fresh cilantro





1 tsp. lime juice





1 clove garlic, minced





1/4 tsp. salt

1. Combine all ingredients and mix well. Cover; chill for at least 1 hour.





What I did was put everything(except salsa) in a mini food processor and make it creamy doing it that way.Then once it got all mixed good I put it into a bowl and mixed in the salsa.It is so creamy!I used mild salsa., serve with thick tortilla chips.





Hot Pizza Dip





1 (8-ounce) package of cream cheese, softened


1/2 cup sour cream


1/4 teaspoon dried basil, crushed


1/4 teaspoon garlic powder


1/2 cup pizza sauce


1/4 cup pepperoni, chopped


1/4 cup onions, chopped


1/4 cup green peppers, chopped


1 cup mozzarella cheese, shredded


Preheat oven to 350*F (175*C).


Mix together the cream cheese, sour cream, oregano, and garlic powder.


Spread the mixture into a 9-inch pie plate. Pour the pizza sauce on top of the cheese mixture. Top with the pepperoni, onions and green peppers.


Bake for 10 minutes, remove and sprinkle with the mozzarella cheese and cook for an additional 5 minutes, or until cheese is melted.


Serve with bread sticks or crackers.


Makes about 3 1/2 cups.





Savory Stuffed Mushrooms





12 Large mushrooms (I usually buy 2 packs of the regular pre washed mushrooms at the grocery store and usually end up using both packs)


6 ounces of mild or hot sausage (I usually buy a package of the frozen pre-cooked breakfast sausage and just heat it in the microwave)


3 tablespoons seasoned bread cumbs


1/2 shredded mozzarella cheese, divided


1 - 2 cloves of garlic


2 teaspoons dried parsely





preheat oven to 375 degrees.


Grease a large baking sheet.


Remove and chop mushroom stems, reserving the caps.


Heat a medium skillet over medium-high heat; add sausage. Cook until browned and crumbly, about 5 minutes; drain. (I usually opmit this step and heat the frozen precooked breakfast sausage in the microwave. I put on paper towels and drain the excess oil)





(at this point I usually add mushroom stems %26amp; sausage to a chopper and chop it this way, but you could do them each by hand - chopping)





Stir chopped mushroom stems, bread crumbs and 1/4 cup of mozzarella into skillet with the sausage. I usually add some garlic (1 - 2 cloves chopped) as well a couple tablespoons of grated parmasen cheese!





Remove skillet from heat. Spoon sausage mixture into mushroom caps. Arrange stuffed mushrooms on prepared baking sheet. Top mushrooms with remaining mozzarella. Bake until stuffing is hot, about 15 minutes. Place on a serving platter and garinsh with parsley.

Crab Stuffed Mushrooms





1 1/2 pounds (about 24) white mushrooms


4 green onions, chopped


3 cloves garlic, minced


1 tablespoon fresh basil, chopped


1/4 cup fresh cilantro, chopped


1 fresh green chile, seeded and finely chopped


1 pound crab meat, shelled and flaked


1/2 teaspoon Dijon mustard


1 tablespoon ground red pepper


6 ounces quality white cheddar cheese, grated





# Wipe the mushrooms clean with a damp paper towel and remove the stems. Place the mushroom caps on a shallow baking dish.





# Mince the stems. Combine all the remaining ingredients, including the minced stems, and mix well.





# Spoon the mixture into the mushroom caps and bake in a preheated 350掳 oven for 15 minutes. Serve warm. Makes about 24 appetizers.

I'd say go for some dips- I've listed some of my favs, they're all quick and easy








Spinach Dip- 1 cup mayonnaise


1 (16 ounce) container sour cream


1 (1.8 ounce) package dry Knorrs soup mix


1 (4 ounce) can water chestnuts, drained and chopped


1/2 (10 ounce) package frozen chopped spinach, thawed and drained


1 (1 pound) loaf round pumpernickle bread


(the directions are on the soup mix, its really easy)





Taco Dip


get the dried taco seasoning, mix with 16oz of sour cream


layer with lettuce, cheese, tomatoes, and olives


serve with tostidos





Chips and French onion dip





Veggies and Dip





also you can make pigs in a blanket- get ';little smokies'; and a can of crescent rolls. wrap pieces of the dough around the tiny hot dogs then put in the oven for on 350 for 10 mins (or until the dough is golden brown) serve with ketchup and mustard
For hot, try jalapeno poppers, which can be found in your frozen foods section. You can also try taquitos and mini quesadillas, which should also be in your grocery freezer section.





If you want to make an appetizer, try making pinwheels. Buy large burrito shells, and fill with your favorite sandwich ingredients. Be creative - spread mayo or cream cheese or other cheese spread and top with lunch meats and cheeses, tuna salad, lettuce, tomatoes, or any other veggies you like. Roll them up and wrap in plastic wrap and refrigerate for a couple of hours or overnight. Remove wrap and slice about an inch thick. You can serve plain or with your favorite dipping sauces (mustards, sour cream dips, bbq sauce).





Cold appetizers can be as simple as chips and dip/salsa and a veggie/fruit tray with sour cream dip or ranch dressing.





Lots of room to be creative with this.
