Go shopping and read the lables! Not on the ready-made meals, but on packets of healthy food such as lentils, beans, grains, cans, frozen veggies... There are lots of ideas and you will have an instant shopping list too!





Once you have a cupboard full of healthy staple items and have a shopping basket full of seasonal veg and fruit, then you can start experimenting beyond what is on the packets! Do a web search putting key words in. For example: tomatoes + lentils + onions + recipe





This brings up ';Ethiopian Spicy Tomato Lentil Stew'; in the number one spot on google and ';Lentils With Noodles, Onions and Tomatoes: Syrian Rishta'; in yahoo! today. Both are quick, healthy and nutritious and sound very tasty, but YMMV





Remember that the most simple food is raw and uncooked... As it is summer, concentrate on salads using different fruit and vegetables as well as the normal ';salad'; ingredients. Practice making extra special dressing to wring the changes and add blue cheese, raspberries or specialist vinegars and/or oils as the fancy takes you.





Couscous it great and the simplest ';staple'; to cook. Soak chick peas over night and simmer until tender. Drain and keep sealed in the fridge until you need them (max. a week). Brown lentils too. You can add all these to salads to bulk them out a bit!





Soup is the quickest and healthiest ';instant food';. Just whack in a variety of washed, peeled and chopped veg and any other ingredients you fancy. Puree all, half or just a bit to ';thicken';. Stir in cream or jogurt to serve if you wish. Serve with wholemeal bread.





Fish stew/soup is quick and healthy too... Make a good stock and then add garlic, onions, tin of chopped tomatoes and your favourite herbs and spices. Simmer to mingle tastes then add chunks of different fish and shell fish to taste. Cook around 15-20 minutes and serve with chunks of baguette.

get a slice of bread,place it under a preheated grill,brown both sides and then cover one side in either margarine or butter.
