1 cup warm water

1 package active, dry yeast (2 1/4 tsp)

1 TBS sugar

2 TBS extra virgin olive oil

approx 4 cups flour (unbleached and/or whole wheat)

2 tsp salt

Let the yeast dissolve in the water, evoo, sugar and salt until foamy (about five minutes). Add the flour until the dough forms a stiff ball on your dough hook. The dough should be slightly sticky, but firm. This takes about 5 minutes on medium on a Kitchen Aid. Coat with EVOO and cover loosely in a warm place until doubled in size (about 90 minutes). Punch down and let re-rise until doubled. Spread on your pizza pan and coat with evoo. Top with sauce, cheese and toppings. Cook at 450 for about 12 minutes.Any good recipes for pizza dough?
Making good pizza is not really difficult, but if you simply follow any recipe on the internet without knowing the little details that need some care and application, you will end up with soggy matzos and cheese. Don't bother.

If you want your son to end up with something really good, and it could be as good as, if not better, anything in a restaurant, you need to know the little tips and tricks.

We started making our own pizza a couple of months ago, and it was not a success. We only started getting it right once we found some proper guidelines, rather than useless recipes that did not explain how to actually make it. Have a look at http://www.the-pizza-gourmet.com/ya003, and you should have a happy result. There is quite a bit to learn, but it is worth it. Things like ingredients, oven temp, dough preparation etc., are ignored at your own peril.

Enjoy it - great to have the kids involved.
