I'm looking for new main dish salad recipes. Whats your favorite?

The weather will be warm out soon!I'm looking for new main dish salad recipes. Whats your favorite?
SOUTH OF THE BORDER SALAD





1 iceburg lettuce, shredded


1 can pinto beans, drained


1/2 onion, chopped


2 tomatoes, cut up


1/2 lb. shredded cheddar cheese


1 small jar salsa


sliced black olives (optional)


sliced avocado (optional


about 3-4 handfuls crunched up tortilla chips


Mix everything together really well and eat! (You can also add 1 lb. of browned ground beef, but I don't usually do that)





CHINESE TUNA SALAD


1/2 c. mayonnaise


1 TB. cream


1 TB. vinegar


1 (7 oz) can tuna, white meat - water packed, drained


1/3 c. chopped green onion


1/4 c. EACH chopped red %26amp; green bell pepper


2 TB. chopped black olives


3 oz. Chinese chow mein noodles


Mix mayonnaise, cream %26amp; vinegar. Add all remaining ingredients and toss (adding chow mein noodles just before serving)I'm looking for new main dish salad recipes. Whats your favorite?

Spa salad! It's one of my favorites, and litterally covers every food group!





- romaine lettuce torn into bite sized pieces


- cooked chicken breast cut up into bite sized chunks


- mandarin orange slices (the canned ones work great)


- red seedless grapes


- chopped walnuts


- ramen noodles, cooked and drained (don't use the seasoning... I break them into pieces before cooking too so they're not too long)


- grated Romano cheese





There鈥檚 no specific quantities of each ingredient, I just use however much I need for the number of people I'm feeding. This is best with a curry dressing (it's nice and light and tastes really good with the fruit!)





curry dressing:


2/3 c. plain low-fat yogurt


1 tbsp. honey


1 tsp. lime juice


1/4 tsp. curry powder
Cobb Salad.... buy or make a citrusy vinegrette.... cut up or buy pre-packed lettuce. Add sliced mangos, avacodos tomatoes, pine nuts, grilled chicked and cheese.... (traditionaly its blue cheese, but I like mozz)
Try this one! It is great (%26amp; works well for a pot luck, take-along too!):





Garden Pasta Salad





陆 cup salami, pepperoni, OR mortadella, cut into small pieces


1 medium tomato, peeled %26amp; chopped


录 cup chopped cucumber


录 cup chopped green pepper


1 slice medium onion, finely chopped


1 tablespoon snipped parsley


Fresh Herb Dressing (recipe follows)


8 ounces wide noodles


录 cup crumbled feta cheese (1 ounce)





In mixing bowl, combine meat, tomato, cucumber , green pepper, onion and parsley Toss with Fresh Herb Dressing. Cover %26amp; chill thoroughly.





Cook pasta (per package instructions), drain %26amp; rinse with cold water %26amp; drain again. Continue rinsing %26amp; draining till pasta is well chilled.





Turn cooked pasta into a salad bowl. Spoon meat-dressing mixture atop pasta. Sprinkle with crumbled feta cheese. Toss. Makes 2 servings.





Fresh Herb Dressing:


In a screw-top jar, combine 录 cup salad oil; 3 tablespoons dry white wine; 2 tablespoons lemon juice; 1 tablespoon sugar; 2 teaspoons fresh snipped basil or 陆 teaspoon dried basil, crushed; 录 teaspoon salt; 1/8 teaspoon pepper; and several dashes bottled hot pepper sauce. Cover %26amp; shake well.

Chicken Salad





1 pound chicken breast meat, cooked, skinned, boned and diced


1/2 cup diced celery


1 cup mayonnaise


1/4 teaspoon salt


1/4 teaspoon pepper


1/2 teaspoon sugar


1/2 teaspoon onion powder


1/4 cup toasted almonds


1 tablespoon lemon juice


1 cup crushed pineapple, well drained


alfalfa sprouts


whole fresh pineapple for serving, optional





Place chicken in large mixing bowl; add celery and mix. Add remaining ingredients and mix with rubber spatula.





To serve in pineapple shell, cut whole pineapple in half lengthwise. Using a grapefruit knife, cut around the inside of the pineapple, leaving about 1/4'; from the edge. Scoop out remaining pineapple.





Place a bed of sprouts in the shell; scoop salad mixture on top. Sprinkle with 1 Tbsp. toasted almonds and serve chilled.





This is also very good served on a fresh croissant
