Any quick and easy crockpot/slowcooker recipes?

I've made this recipe many times, always comes out perfect!

Pineapple Salsa Chicken

6 skinless chicken breasts

1 can tidbit pineapple (drain the juice)

1 can black beans (do not drain)

1 jar (32-ounce size) chunky style salsa

Place the thawed chicken breasts in the crockpot and add the rest of the ingredients. Cook on low for 6-8 hours. Serve with warm tortillas and some rice. (I also add sour cream, it's your choice!)Any quick and easy crockpot/slowcooker recipes?
I have a couple that my VERY picky kids *love*

*Thai Chicken*

4 Chicken Breasts

3/4 cup salsa (Mild, Medium, or Hot depending on your taste)

1/4 cup peanut butter (chunky or smooth, doesn't matter)

1 Tablespoon soy sauce

2 Tablespoon lime juice (lemon juice also works just fine)

and 1/4 teaspoon ground ginger (this can be increased, decreased, or omitted depending on your taste)

*Put the chicken in the crock pot

*Mix the other ingredients until smooth and pour over top of chicken

*Cook on High for about 4 hours (time varies depending on your crock pot so keep an eye on it the first time you make it or it'll be a bit dry).

This is VERY good served on top of some plain, instant white rice.

*Pineapple Pork Roast*

2-3 pound pork roast of any kind

1 - 20oz. can of pineapple chunks *IN HEAVY SYRUP*

1 cup dried, sweetened cranberries (Craisins)

Seasoned Salt (like Lowry's) and black pepper

*Sprinkle on a good bit (don't go overboard but don't skimp!) of seasoned salt and pepper onto the roast and rub it in.

*Stick the meat in the crock pot and empty the ENTIRE contents of the can of pineapple chunks on top of it.

*Sprinkle the Craisins on top and cook on low for about 8 hours or until the meat is done. You could also cook it on High until it's done but it won't be quite as flavorful.Any quick and easy crockpot/slowcooker recipes?
Easy Slow Cooker Beef Stew

Container: slow cooker, 3 quart or larger

Servings: 6

Serving Size: 1 cup

Prep Time: 15 minutes

Cook Time: 6 or more hours

Ingredients

- 1 pound stew beef, cubed

- 1 pound carrots

- 2 onions

- 3 stalks celery

- 1 teaspoon garlic powder

- pinch cinnamon

- 2 bay leaves

- 1 28 oz can tomatoes

- 1 4 oz can mushrooms (optional)

- 1 teaspoon salt

fresh ground pepper, to taste

- 1/2 cup red wine or water

- 1/2 cup quick cooking tapioca

Trim any large bits of fat from the meat. Peel carrots and cut into 1/2 inch rounds. Dice onion; slice celery crosswise. Add all ingredients to slow cooker and mix thoroughly. Set temperature control to high ( 5 to 6 hours cooking time) or low (10 to 12 hours cooking time). In general, avoid removing cover while cooking (this can add to the required time), although brief checking to determine the state of doneness near the end of cooking time is ok.

When done (meat and vegetables are tender), correct seasoning. Remove bay leaves.

Served with a green salad, crusty bread and a hearty red wine, this is a very satisfying supper dish.
I like to do roast beef, just put a package of onion soup mix, some sliced onions, garlic, salt/pepper and any thing else you like with your beef. Some people like mushrooms.

cover with water-not too much, a little over half way.

And let simmer for a few hours, depending on how big your pot, and beef is.

Bon apetit!
There are some cookery books containing recipes just for slow cookers. I keep one on my little canal boat and have a different one at home; the home one is:

New Recipes for your Slo-cooker'; by Annette Yates.

ISBN 978-0-572-02636-3

It includes recipes like:- stuffed vine leaves, winter vegetables in coconut cream, curried chickpeas and okra, cheese-stuffed onions, mackerel and monkfish bake, haddock and courgettes in wine, lamb shanks with garlic, rosemary and ginger, spicy gingered chicken with pineapple and even Christmas pudding!

You could try your local library to what they have on their shelves or can get in for you.

And this one got 4.5/5 stars after nearly 3,000 reviews - that's got to be reliable!

Awesome Slow Cooker Pot Roast

Serves 12

Prep time 10 Min

Cook time 8 Hrs

Ready in 8 Hrs 10 Min

This is a very easy recipe for a delicious pot roast. It makes its own gravy. It's designed especially for the working person who does not have time to cook all day, but it tastes like you did. You'll want the cut to be between 5 and 6 pounds.

Ingredients

2 (10.75 ounce) cans condensed cream of mushroom soup

1 (1 ounce) package dry onion soup mix

1 1/4 cups water

5 1/2 pounds pot roast

Directions

In a slow cooker, mix cream of mushroom soup, dry onion soup mix and water. Place pot roast in slow cooker and coat with soup mixture.

Cook on High setting for 3 to 4 hours, or on Low setting for 8 to 9 hours.
Easiest I know is Mince, Potatoe, Carrots, Onion and some

stock. Lovely for tea with Bread and Butter dippers.
There was a great beef soup recipe that came with the small crockpot I bought years ago....really simple and tasty!!! I'd always add 2-3 more carrots and celery stalks, some green beans, and a few more tomatoes. Here is how it originally is:

1 lb stewing beef chunks (I use maybe 1/2 size)

2 carrots-sliced

2 celery stalks-sliced

1 baking potato (1/2'; cubes)

1 can diced tomatoes with juice (I get large can and use about 3/4 of it)

1 md or large yellow onion

1 tsp salt

1/4 tsp pepper

1 Tbs dried parsley flakes

1/4 tsp thyme

water--about 1 cup

Cook as directed on your crockpot. I also, sometimes, add a leek, or parsnip, or cabbage, or combo......
I just made this the other night and it is easy and healthy and my boyfriend loved it!

1 lb ground turkey (browned)

2 8 oz. cans of tomato sauce

1 15 oz can kidney beans undrained

1 package Mccormicks spicy chile seasoning

1 onion

1 green bell pepper

Throw all this in the slow cooker on high for 45 minutes and you are done! It was so good and easy! It took me maybe 10 minutes to prepare the food to throw in. We put grated shredded cheese on top and fritos!
