Does anyone have any ';healthier'; dessert recipes?

Anything that is a little lower in fat and calories...Does anyone have any ';healthier'; dessert recipes?
Frozen Yogurt Parfait:


1 pint fresh raspberries, strawberries, or blueberries or 1 12oz pkg frozen unsweetend berries, thawed


3 TBS sugar


1 TBS lemon juice


1 tsp grated lemon rind


1 pint frozen vanilla yogurt, slightly softened





In a food processor or blender, whirl half of the raspberries with the sugar, lemon juice and lemon rind for 15 seconds or until pureed. Transfer the puree to a medium size bowl and stir in the remaining berries. Layer the puree with the frozen yogurt in four 8oz parfait glasses. Place in freezer for 45 min or until the parfait is firm. Serves 4

what about light flat cookies, you cover the bottom of a with them, pour fat free milk on the cookies until they get soaked, then you cover then with diet pudding (made as the box says, with fat free milk) you take to the fridge and let it get hard, then you add diet jello on the top and take back to fridge.


My favorite is coconut pudding and strawberry jelly. It is yummy and totally fat and sugar free!!!
using applesauce in place of vegetable oil in any cake reduces the fat
fruit salad, its the best!!
Apple Oatmeal Muffins


These muffins are delicious hot or cold!





Ingredients


1 egg





3/4 cup water





1 cup raisins





1 chopped apple





1/2 cup oil





7/8 cup rice flour





1 cup quick oats, uncooked





1/3 cup granulated sugar





5 teaspoons baking powder





1 teaspoon salt





1 teaspoon nutmeg





2 teaspoons cinnamon





Method


Preheat oven to 375掳





Grease muffin pans





Beat egg in large bowl





Stir in remaining ingredients, mixing just to moisten





Pour into greased muffin pans until almost full





Bake at 375掳 for 25 to 30 minutes





Yield: 10 to 12 muffins.
I've served this to guests as well as my family many, many times. My daughter asks me to make them often. Sometimes we even have them for breakfast!





Poached Pears with Raspberry Sauce





4 ripe, but firm pears


1 lemon, thinly sliced


1 whole vanilla bean


2 cinnamon sticks


8 whole cloves





1 10-oz package frozen raspberries, thawed


sugar to taste





In a large saucepan place enough water to cover the pears, the lemon slices, vanilla bean, cinnamon sticks and whole cloves. Bring to a boil, simmer for 5 minutes. Meanwhile, peel the pears, leaving them whole and the stem attached if possible. Using a melon baller, scoop out the seeds from the bottom of the pear. Cut a small slice off the bottom of the pear to help it stand upright if needed.


Add the pears to the simmering liquid. Simmer gently until the pears are tender about 15 to 20 minutes. Remove the pears and stand them upright. Let cool slightly, then cover with plastic wrap and refrigerate until cold, several hours or up to 1 day.


For sauce:


Drain thawed rasberries. Place rasberries in a fine meshed sieve and push the raspberries through the sieve with the back of a spoon, catching the puree in a small bowl, until just seeds remain. Discard seeds. Add sugar (or Equal) to taste to the raspberry sauce, stirring well.


To serve, place a pear on a plate or small bowl. Drizzle with raspberry sauce.

There are a lot of things you can do with fruit for a healthier desert. Smoothies are always good and you can make those with ice or a non-fat frozen yogurt. It's a lot of fun to dip cut fruit into yogurt or something. Check the two links I'm giving below. I'm certain you can find something there.
